These Creamy Asiago Bacon-Wrapped Roasted Onions are a rich and savory side dish or appetizer that’s totally next-level. Sweet roasted onions are wrapped in crispy bacon and filled with a creamy, melty Asiago cheese center. They’re packed with flavor and perfect for holidays, dinner parties, or anytime you want to impress with something a little different.

4 medium yellow onions, peeled

8 slices bacon (thin-cut works best)

For the Creamy Asiago Filling:

1/2 cup shredded Asiago cheese

1/4 cup cream cheese, softened

2 tablespoons sour cream or heavy cream

1 garlic clove, minced

1/2 teaspoon onion powder

1/4 teaspoon dried thyme (optional)

Fresh parsley, chopped (for garnish)

½ cup shredded Asiago cheese
¼ cup cream cheese, softened
2 tablespoons sour cream or heavy cream
1 garlic clove, minced
½ teaspoon onion powder
¼ teaspoon dried thyme (optional)
Salt and pepper, to taste
Fresh parsley, chopped (for garnish)
Instructions
Preheat oven to 400°F (200°C). Line a baking dish or sheet with parchment paper or foil.
Prep the onions: Trim both ends and peel the onions. Use a spoon or small knife to hollow out a hole in the center (about 1–1.5 inches wide), leaving the outer layers intact.
Make the filling: In a bowl, mix together Asiago cheese, cream cheese, sour cream, garlic, onion powder, thyme, and a pinch of salt and pepper until smooth.
Stuff the onions: Spoon the cheese filling into the hollowed centers of each onion.
Wrap with bacon: Wrap 2 slices of bacon around each onion to cover as much of the surface as possible. Secure ends with toothpicks if needed.
Drizzle with olive oil and season the tops lightly with salt and pepper.
Roast for 45–55 minutes, or until the onions are tender and the bacon is crisp. If bacon needs more crisping, broil for the last 2–3 minutes.
Garnish with chopped parsley and serve warm.
