Description

These soft and chewy cookies are made with cream cheese for a rich texture and loaded with juicy strawberries. They’re perfect for spring, summer, or any time you crave a fruity treat!


Ingredients

1/2 cup (1 stick) unsalted butter, softened

4 oz cream cheese, softened

3/4 cup granulated sugar

1 large egg

1 teaspoon vanilla extract

2 cups all-purpose flour

1 teaspoon baking powder

1/4 teaspoon salt

1/2 cup fresh strawberries, finely diced

1 tablespoon cornstarch (to absorb moisture from strawberries)

1/2 cup white chocolate chips (optional, for extra sweetness)


Instructions

Prep the Strawberries

  1. Toss diced strawberries with 1 tablespoon cornstarch to prevent excess moisture. Set aside.

2. Make the Dough

  1. In a large bowl, beat butter, cream cheese, and sugar until light and fluffy (about 2 minutes).
  2. Add egg and vanilla extract, mixing until combined.
  3. In a separate bowl, whisk together flour, baking powder, and salt.
  4. Gradually add dry ingredients to the wet ingredients, mixing until just combined.

3. Fold in the Strawberries

  1. Gently fold in the strawberries and white chocolate chips (if using).
  2. Cover the dough and chill in the refrigerator for 30 minutes (this helps prevent spreading).

4. Bake the Cookies

  1. Preheat oven to 350°F (175°C). Line a baking sheet with parchment paper.
  2. Scoop tablespoon-sized balls of dough onto the baking sheet, spacing them 2 inches apart.
  3. Bake for 12–14 minutes, or until the edges are lightly golden.

5. Cool & Enjoy

 

  1. Let cookies cool on the baking sheet for 5 minutes, then transfer to a wire rack.
  2. Enjoy warm or store in an airtight container for up to 3 days.

Notes

If using frozen strawberries, thaw and pat dry before dicing.

Add a drizzle of melted white chocolate for extra sweetness!

For a crunchier version, bake for an extra 2–3 minutes.
