These soft and chewy cookies are made with cream cheese for a rich texture and loaded with juicy strawberries. They’re perfect for spring, summer, or any time you crave a fruity treat!
Ingredients
1/2 cup (1 stick) unsalted butter, softened
4 oz cream cheese, softened
3/4 cup granulated sugar
1 large egg
1 teaspoon vanilla extract
2 cups all-purpose flour
1 teaspoon baking powder
1/4 teaspoon salt
1/2 cup fresh strawberries, finely diced
1 tablespoon cornstarch (to absorb moisture from strawberries)
1/2 cup white chocolate chips (optional, for extra sweetness)
Instructions
Prep the Strawberries
- Toss diced strawberries with 1 tablespoon cornstarch to prevent excess moisture. Set aside.
2. Make the Dough
- In a large bowl, beat butter, cream cheese, and sugar until light and fluffy (about 2 minutes).
- Add egg and vanilla extract, mixing until combined.
- In a separate bowl, whisk together flour, baking powder, and salt.
- Gradually add dry ingredients to the wet ingredients, mixing until just combined.
3. Fold in the Strawberries
- Gently fold in the strawberries and white chocolate chips (if using).
- Cover the dough and chill in the refrigerator for 30 minutes (this helps prevent spreading).
4. Bake the Cookies
- Preheat oven to 350°F (175°C). Line a baking sheet with parchment paper.
- Scoop tablespoon-sized balls of dough onto the baking sheet, spacing them 2 inches apart.
- Bake for 12–14 minutes, or until the edges are lightly golden.
5. Cool & Enjoy
- Let cookies cool on the baking sheet for 5 minutes, then transfer to a wire rack.
- Enjoy warm or store in an airtight container for up to 3 days.
Notes
If using frozen strawberries, thaw and pat dry before dicing.
Add a drizzle of melted white chocolate for extra sweetness!
For a crunchier version, bake for an extra 2–3 minutes.
