Scale
- 1 pre-made flatbread (or naan)
- 4 oz goat cheese, softened
- 1/2 cup dried cranberries (or fresh cranberries, halved)
- 1/4 cup walnuts or pecans, chopped (optional)
- 1 tbsp honey (plus more for drizzling)
- 1/2 tsp fresh thyme or rosemary, chopped
- 1 tbsp olive oil

Instructions
- Preheat oven to 375°F (190°C). Place the flatbread on a baking sheet.
- Prepare the base: Brush the flatbread lightly with olive oil.
- Add toppings: Spread softened goat cheese evenly over the flatbread. Sprinkle cranberries, nuts (if using), and fresh herbs on top.
- Bake: Place in the oven and bake for 8–10 minutes, or until the edges are crispy and the cheese is slightly melted.
- Finish and serve: Drizzle with honey and season with a pinch of salt and black pepper. Slice and enjoy warm!
Notes
- Make it gluten-free by using a gluten-free flatbread or cauliflower crust.
- For extra flavor, add caramelized onions or balsamic glaze.
- Swap the nuts for sunflower seeds or omit them for a nut-free version.
- Use fresh cranberries for a more tart flavor—just roast them slightly before adding.
