Description

This Cranberry Bliss Coffee Cake is a soft, buttery cake packed with tart cranberries, warm spices, and a hint of citrus, then topped with a sweet cream cheese glaze. Perfect for the holidays or a cozy brunch, this cake pairs beautifully with a hot cup of coffee!

 


Ingredients

For the Cake:

1 1/2 cups all-purpose flour

1 teaspoon baking powder

1/2 teaspoon baking soda

1/2 teaspoon salt

1/2 teaspoon cinnamon

1/2 cup unsalted butter, softened

3/4 cup granulated sugar

2 large eggs

1/2 cup sour cream or Greek yogurt

1 teaspoon vanilla extract

1 teaspoon orange zest

1 cup fresh or dried cranberries (if using dried, soak in warm water for 10 minutes and drain)

1/2 cup white chocolate chips (optional)

For the Cream Cheese Glaze:

4 oz cream cheese, softened

1/2 cup powdered sugar

12 tablespoons milk

1/2 teaspoon vanilla extract

For Topping:

1/4 cup dried cranberries, chopped

2 tablespoons white chocolate, melted (for drizzling)


Instructions

  • Preheat & Prep:

    • Preheat oven to 350°F (175°C).
    • Grease and flour an 8×8-inch baking dish (or line with parchment paper).
  • Mix the Dry Ingredients:

    • In a bowl, whisk together flour, baking powder, baking soda, salt, and cinnamon. Set aside.
  • Make the Batter:

    • In a large bowl, beat butter and sugar together until light and fluffy.
    • Add eggs, one at a time, mixing well after each.
    • Stir in sour cream, vanilla extract, and orange zest.
    • Gradually mix in the dry ingredients until just combined.
    • Gently fold in cranberries and white chocolate chips.
  • Bake:

    • Pour the batter into the prepared baking dish.
    • Bake for 30–35 minutes or until a toothpick inserted comes out clean.
    • Let the cake cool completely before glazing.
  • Make the Glaze:

    • Beat together cream cheese, powdered sugar, milk, and vanilla extract until smooth.

 

  • Decorate & Serve:

    • Spread the glaze over the cooled cake.
    • Sprinkle with chopped dried cranberries.
    • Drizzle melted white chocolate over the top.
    • Slice and enjoy with coffee! ☕
