Ingredients
- 1 lb boneless, skinless chicken breasts, cut into bite-sized pieces
- 2 cups crushed buttery crackers (like Ritz)
- 1/2 teaspoon garlic powder
- 1/2 teaspoon onion powder
- 1/2 teaspoon paprika
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
- 1 egg
- 1/2 cup buttermilk
- 1/2 cup all-purpose flour
- Cooking spray or oil (if frying)
For dipping (optional):
- Ranch dressing
- Honey mustard
- BBQ sauce
Instructions
Prepare the coating:
Crush crackers into fine crumbs and place in a shallow bowl.
Mix in garlic powder, onion powder, paprika, salt, and black pepper.
Prepare the batter:
In another bowl, whisk together the egg and buttermilk.
Place the flour in a separate shallow bowl.
Coat the chicken:
Dredge each chicken piece in the flour, shaking off excess.
Dip into the buttermilk mixture, then coat with the crushed cracker crumbs, pressing gently to adhere.
Cook the chicken:
Baking method:
Preheat oven to 400°F (200°C).
Place chicken bites on a greased or parchment-lined baking sheet.
Lightly spray with cooking spray for extra crispiness.
Bake for 15-18 minutes, flipping halfway, until golden brown and cooked through.
Frying method:
Heat about 2 inches of oil in a deep pan to 350°F (175°C).
Fry chicken bites in batches for 3-4 minutes until golden and crispy.
Drain on paper towels.

Notes
You can use any type of buttery crackers, like Club or Saltines, for a slightly different flavor.
For extra crunch, double-dip the chicken by repeating the egg wash and cracker coating steps.
To make it spicy, add ½ teaspoon cayenne pepper to the cracker mix
