Description

A classic, easy-to-make casserole with seasoned beef, corn, cheese, and crispy tater tots for the ultimate comfort meal.


Ingredients

  • 1 lb ground beef (or ground turkey)
  • 1/2 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1/2 teaspoon garlic powder
  • 1/2 teaspoon onion powder
  • 1 teaspoon smoked paprika
  • 1 small onion, diced
  • 2 cloves garlic, minced
  • 1 (10.5 oz) can cream of mushroom soup (or cream of chicken)
  • 1/2 cup sour cream
  • 1/2 cup milk
  • 1 tablespoon Worcestershire sauce
  • 1 (15 oz) can corn, drained (or 1 1/2 cups frozen corn)
  • 2 cups shredded cheddar cheese
  • 1 (32 oz) bag frozen tater tots
  • 2 tablespoons chopped green onions (for garnish, optional)

Instructions

1. Preheat & Cook the Beef:

  1. Preheat oven to 375°F (190°C). Grease a 9×13-inch baking dish.
  2. In a large skillet over medium heat, cook ground beef with diced onion until browned (about 5-7 minutes). Drain excess grease.
  3. Stir in garlic, salt, black pepper, garlic powder, onion powder, and smoked paprika. Cook for another 1-2 minutes.

2. Make the Creamy Filling:

  1. Reduce heat to low and stir in cream of mushroom soup, sour cream, milk, Worcestershire sauce, and corn. Mix until well combined.
  2. Remove from heat and stir in 1 cup of shredded cheddar cheese.

3. Assemble the Casserole:

  1. Pour the beef mixture into the prepared baking dish and spread evenly.
  2. Arrange frozen tater tots in a single layer over the top.
  3. Sprinkle the remaining 1 cup of cheddar cheese over the tater tots.

4. Bake & Serve:

  1. Bake uncovered for 35-40 minutes, or until the tater tots are crispy and golden brown.
  2. Let cool for 5 minutes, then garnish with green onions if desired.
  3. Serve hot and enjoy!

Notes

  • Make it spicy: Add diced jalapeños or ½ teaspoon cayenne pepper.
  • Swap protein: Use shredded chicken or ground sausage instead of beef.
  • Add veggies: Toss in black beans, bell peppers, or green beans for extra texture.
  • Dairy-free? Use coconut cream instead of sour cream and a dairy-free cheese alternative
