- 1 lb ground beef (or ground turkey)
- 1/2 teaspoon salt
- 1/2 teaspoon black pepper
- 1/2 teaspoon garlic powder
- 1/2 teaspoon onion powder
- 1 teaspoon smoked paprika
- 1 small onion, diced
- 2 cloves garlic, minced
- 1 (10.5 oz) can cream of mushroom soup (or cream of chicken)
- 1/2 cup sour cream
- 1/2 cup milk
- 1 tablespoon Worcestershire sauce
- 1 (15 oz) can corn, drained (or 1 1/2 cups frozen corn)
- 2 cups shredded cheddar cheese
- 1 (32 oz) bag frozen tater tots
- 2 tablespoons chopped green onions (for garnish, optional)
Instructions
1. Preheat & Cook the Beef:
- Preheat oven to 375°F (190°C). Grease a 9×13-inch baking dish.
- In a large skillet over medium heat, cook ground beef with diced onion until browned (about 5-7 minutes). Drain excess grease.
- Stir in garlic, salt, black pepper, garlic powder, onion powder, and smoked paprika. Cook for another 1-2 minutes.
2. Make the Creamy Filling:
- Reduce heat to low and stir in cream of mushroom soup, sour cream, milk, Worcestershire sauce, and corn. Mix until well combined.
- Remove from heat and stir in 1 cup of shredded cheddar cheese.
3. Assemble the Casserole:
- Pour the beef mixture into the prepared baking dish and spread evenly.
- Arrange frozen tater tots in a single layer over the top.
- Sprinkle the remaining 1 cup of cheddar cheese over the tater tots.
4. Bake & Serve:
- Bake uncovered for 35-40 minutes, or until the tater tots are crispy and golden brown.
- Let cool for 5 minutes, then garnish with green onions if desired.
- Serve hot and enjoy!
Notes
- Make it spicy: Add diced jalapeños or ½ teaspoon cayenne pepper.
- Swap protein: Use shredded chicken or ground sausage instead of beef.
- Add veggies: Toss in black beans, bell peppers, or green beans for extra texture.
