Description

Cowboy Butter Swim Biscuits are savory, cheesy buttermilk biscuits baked in a flavorful cowboy butter, resulting in a rich and delicious treat.


Ingredients

  • 2 1/2 cups all-purpose flour
  • 4 teaspoons baking powder
  • 1/2 teaspoon kosher salt
  • 1 cup shredded medium cheddar cheese
  • 2 cups buttermilk
  • 1 recipe cowboy butter, melted (reserve 1 tablespoon for topping)

Instructions

  • Preheat the oven to 450°F (232°C). Grease an 8×8-inch baking dish with nonstick cooking spray.
  • In a medium bowl, combine flour, baking powder, salt, and shredded cheese. Stir to mix.
  • Pour in the buttermilk and stir until just combined; avoid overmixing.
  • Pour most of the melted cowboy butter into the prepared baking dish, reserving about 1 tablespoon.
  • Transfer the dough into the baking dish, spreading it evenly to the edges.
  • Using a knife, cut the unbaked dough into 9 squares.
  • Bake for 26-28 minutes, or until the tops are golden brown.
  • After baking, brush the reserved melted cowboy butter over the tops of the biscuits.
  • Allow the biscuits to absorb the butter before serving.

Notes

  • To make your own buttermilk, add 1 tablespoon of lemon juice or white vinegar to a cup of milk and let it sit for 5 minutes.
  • For a different flavor, try using other shredded cheeses like Monterey Jack or Colby
