- 2 1/2 cups all-purpose flour
- 4 teaspoons baking powder
- 1/2 teaspoon kosher salt
- 1 cup shredded medium cheddar cheese
- 2 cups buttermilk
- 1 recipe cowboy butter, melted (reserve 1 tablespoon for topping)
Instructions
- Preheat the oven to 450°F (232°C). Grease an 8×8-inch baking dish with nonstick cooking spray.
- In a medium bowl, combine flour, baking powder, salt, and shredded cheese. Stir to mix.
- Pour in the buttermilk and stir until just combined; avoid overmixing.
- Pour most of the melted cowboy butter into the prepared baking dish, reserving about 1 tablespoon.
- Transfer the dough into the baking dish, spreading it evenly to the edges.
- Using a knife, cut the unbaked dough into 9 squares.
- Bake for 26-28 minutes, or until the tops are golden brown.
- After baking, brush the reserved melted cowboy butter over the tops of the biscuits.
- Allow the biscuits to absorb the butter before serving.
Notes
- To make your own buttermilk, add 1 tablespoon of lemon juice or white vinegar to a cup of milk and let it sit for 5 minutes.
- For a different flavor, try using other shredded cheeses like Monterey Jack or Colby
