Ingredients

Units Scale

For the Brownies:

  • 1 cup (225g) unsalted butter, melted
  • 1 1/2 cups (300g) granulated sugar
  • 1/2 cup (100g) light brown sugar, packed
  • 4 large eggs
  • 1 tbsp vanilla extract
  • 1 cup (125g) all-purpose flour
  • 3/4 cup (65g) unsweetened cocoa powder
  • 1/2 tsp salt
  • 1/2 tsp baking powder
  • 2 tsp cornstarch (for extra chewiness)
  • 1/2 cup (85g) semi-sweet chocolate chips (optional)

For the Chocolate Ganache:

  • 3/4 cup (180ml) heavy cream
  • 1 1/2 cups (260g) semi-sweet chocolate chips
  • 2 tbsp unsalted butter

For Topping:

  • 1/4 cup rainbow candy-coated chocolate sprinkles (or mini M&M’s)

Instructions

Step 1: Make the Brownies

Preheat oven to 350°F (175°C). Line a 9×13-inch baking pan with parchment paper.

Mix wet ingredients: In a large bowl, whisk together melted butter, granulated sugar, and brown sugar until smooth.

Add eggs and vanilla: Beat in eggs one at a time, followed by vanilla extract.

Combine dry ingredients: In a separate bowl, whisk together flour, cocoa powder, salt, baking powder, and cornstarch.

Mix batter: Gradually fold the dry ingredients into the wet ingredients. Stir until just combined, then fold in chocolate chips (if using).

Bake: Pour batter into the prepared pan and spread evenly. Bake for 22-25 minutes, or until a toothpick inserted in the center comes out with a few moist crumbs.

Cool completely before adding the ganache.

Step 2: Make the Ganache

Heat heavy cream in a small saucepan over medium heat until it just begins to simmer (don’t boil).

Pour the hot cream over chocolate chips and butter in a heatproof bowl. Let sit for 2 minutes, then stir until smooth.

Let the ganache cool slightly so it thickens but is still spreadable.

Step 3: Assemble the Cosmic Brownies

Spread the chocolate ganache evenly over the cooled brownies.

Sprinkle with rainbow candy-coated sprinkles or mini M&M’s.

Refrigerate for at least 30 minutes to allow the ganache to set.

Step 4: Slice & Serve

Use a sharp knife to cut into even squares.

Enjoy your homemade Cosmic Brownies!

Notes

  • Fudgier Brownies: Bake on the lower end of the time range and slightly underbake for extra gooeyness.
  • Storage: Keep in an airtight container at room temperature for 3 days, or refrigerate for up to 1 week.
  • Freezing: Freeze uncut brownies for up to 3 months. Thaw overnight before serving.
  • Make Them Extra Authentic: Use a ruler to slice brownies into perfect rectangles like the classic version.
