Description
These Homemade Cosmic Brownies are rich, chewy, and topped with a silky chocolate ganache and rainbow candy-coated sprinkles for the ultimate throwback dessert. Made from scratch, they’re even better than the store-bought version!
Ingredients
For the Brownies:
- 1 cup (225g) unsalted butter, melted
- 1 1/2 cups (300g) granulated sugar
- 1/2 cup (100g) light brown sugar, packed
- 4 large eggs
- 1 tbsp vanilla extract
- 1 cup (125g) all-purpose flour
- 3/4 cup (65g) unsweetened cocoa powder
- 1/2 tsp salt
- 1/2 tsp baking powder
- 2 tsp cornstarch (for extra chewiness)
- 1/2 cup (85g) semi-sweet chocolate chips (optional)
For the Chocolate Ganache:
- 3/4 cup (180ml) heavy cream
- 1 1/2 cups (260g) semi-sweet chocolate chips
- 2 tbsp unsalted butter
For Topping:
- 1/4 cup rainbow candy-coated chocolate sprinkles (or mini M&M’s)
Instructions
Step 1: Make the Brownies
Preheat oven to 350°F (175°C). Line a 9×13-inch baking pan with parchment paper.
Mix wet ingredients: In a large bowl, whisk together melted butter, granulated sugar, and brown sugar until smooth.
Add eggs and vanilla: Beat in eggs one at a time, followed by vanilla extract.
Combine dry ingredients: In a separate bowl, whisk together flour, cocoa powder, salt, baking powder, and cornstarch.
Mix batter: Gradually fold the dry ingredients into the wet ingredients. Stir until just combined, then fold in chocolate chips (if using).
Bake: Pour batter into the prepared pan and spread evenly. Bake for 22-25 minutes, or until a toothpick inserted in the center comes out with a few moist crumbs.
Cool completely before adding the ganache.
Step 2: Make the Ganache
Heat heavy cream in a small saucepan over medium heat until it just begins to simmer (don’t boil).
Pour the hot cream over chocolate chips and butter in a heatproof bowl. Let sit for 2 minutes, then stir until smooth.
Let the ganache cool slightly so it thickens but is still spreadable.
Step 3: Assemble the Cosmic Brownies
Spread the chocolate ganache evenly over the cooled brownies.
Sprinkle with rainbow candy-coated sprinkles or mini M&M’s.
Refrigerate for at least 30 minutes to allow the ganache to set.
Step 4: Slice & Serve
Use a sharp knife to cut into even squares.
