This homemade Mexican Pizza is a crispy, cheesy, and flavorful dish just like the one from Taco Bell! Layers of seasoned beef, refried beans, and melted cheese are sandwiched between two golden tortillas and topped with enchilada sauce, diced tomatoes, and green onions. It’s a fun and easy weeknight meal the whole family will love!
Ingredients
For the Pizza Layers:
1 lb ground beef
1 packet (2 tbsp) taco seasoning
1/2 cup water
1 cup refried beans
8 small (6-inch) flour tortillas
1/2 cup vegetable oil (for frying)
For the Toppings:
1 cup red enchilada sauce (or Taco Bell mild sauce)
1 1/2 cups shredded Mexican cheese blend
1/2 cup diced tomatoes
1/4 cup sliced green onions
1/4 cup sliced black olives (optional)
Sour cream (for serving, optional)
Instructions

Cook the Beef:
- In a skillet over medium heat, cook ground beef until browned. Drain excess fat.
- Add taco seasoning and water. Simmer for 5 minutes until thickened. Remove from heat.

Prepare the Tortillas:
- Heat ¼ inch of vegetable oil in a skillet over medium heat.
- Fry each tortilla for 30-45 seconds per side until golden and crispy.
- Drain on paper towels and set aside.

Assemble the Pizzas:
- Preheat oven to 400°F (200°C).
- Spread ¼ cup of refried beans on one tortilla, then add ¼ cup of seasoned beef on top.
- Place another crispy tortilla over the top.

Add the Toppings:
- Spread 2 tbsp of enchilada sauce over the top tortilla.
- Sprinkle with shredded cheese, diced tomatoes, and black olives (if using).

Bake & Serve:
- Place pizzas on a baking sheet and bake for 8-10 minutes, or until the cheese is melted.
- Garnish with green onions and serve with sour cream.
Notes
- Air Fryer Method: Cook tortillas at 375°F for 4-5 minutes until crispy.
- Healthier Option: Use whole wheat tortillas and bake instead of frying.
- Extra Crunch: Swap flour tortillas for corn tortillas for a crunchier texture.
