Scale
- 2 cups warm water (110°F or 45°C)
- 2 teaspoons active dry yeast
- 1 tablespoon sugar
- 3 tablespoons honey
- 1 tablespoon molasses
- 2 tablespoons olive oil
- 1 teaspoon salt
- 2 cups all-purpose flour
- 2 cups whole wheat flour
- 1 tablespoon unsalted butter, melted (for brushing)
Instructions
- Step 1: Prepare the Yeast Mixture
- In a small bowl, combine warm water with active dry yeast and sugar. Stir and let it sit for about 5 minutes until it becomes frothy.
- Stir in honey, molasses, and olive oil to the yeast mixture.
- Step 2: Make the Dough
- In a large mixing bowl, combine all-purpose flour, whole wheat flour, and salt.
- Slowly add the wet ingredients (yeast mixture) to the dry ingredients. Stir until the dough begins to come together.
- Knead the dough on a lightly floured surface for about 8–10 minutes or until smooth and elastic. You can also use a stand mixer with a dough hook for this step.
- Place the dough in a lightly greased bowl, cover with a clean towel, and let it rise in a warm place for about 1 hour, or until it doubles in size.
- Step 3: Shape the Dough
- Punch down the dough to release the air.
- Divide the dough into two equal portions. Roll each portion into a loaf shape and place them into greased loaf pans.
- Cover the pans with a towel and let the dough rise for another 30 minutes.
- Step 4: Bake the Bread
- Preheat the oven to 350°F (175°C).
- Bake the loaves for 25–30 minutes, or until the bread sounds hollow when tapped on the bottom.
- Remove the loaves from the oven and immediately brush the tops with melted butter.
- Step 5: Cool & Serve
- Let the bread cool in the pans for about 10 minutes, then remove the loaves from the pans and transfer to a wire rack to cool completely.
- Slice and serve warm with butter. Enjoy!
Notes
- Make sure the water isn’t too hot, as it can kill the yeast. It should be warm to the touch, but not scalding.
- For extra flavor, you can add a pinch of cinnamon to the dough.
- You can also freeze the dough after the first rise (before shaping) and bake it later. Just let it thaw and rise before baking.
- If you don’t have molasses, you can substitute with more honey, but the flavor will be slightly different.
