For the Cake:
- 2 cups all-purpose flour
- 2 1/2 tsp baking powder
- 1/2 tsp salt
- 1 cup unsalted butter, softened
- 1 3/4 cups granulated sugar
- 4 large eggs
- 1 tsp vanilla extract
- 1 cup whole milk
For the Coffee Soak:
- 1 cup strong brewed coffee or espresso, cooled
- 2 tbsp coffee liqueur (optional, like Kahlúa)
- 2 tbsp sugar
For the Mascarpone Cream:
- 8 oz mascarpone cheese, softened
- 1 cup heavy whipping cream
- 1/2 cup powdered sugar
- 1 tsp vanilla extract
For Topping:
- 1/4 cup cocoa powder
- Dark chocolate shavings (optional)
Instructions
- Make the Cake:
- Preheat oven to 350°F (175°C). Grease and line two 9-inch round cake pans with parchment paper.
- In a bowl, whisk together flour, baking powder, and salt. Set aside.
- In a large mixing bowl, beat butter and sugar until light and fluffy.
- Add eggs one at a time, mixing well. Stir in vanilla extract.
- Alternately add flour mixture and milk, mixing just until combined.
- Divide batter evenly between the two pans. Bake for 25-30 minutes, or until a toothpick inserted comes out clean.
- Let cakes cool completely.
- Make the Coffee Soak:
- In a small bowl, mix coffee, coffee liqueur (if using), and sugar until dissolved.
- Make the Mascarpone Cream:
- Beat mascarpone, heavy cream, powdered sugar, and vanilla until smooth and fluffy (do not overmix).
- Assemble the Cake:
- Place one cake layer on a plate. Brush generously with half of the coffee soak.
- Spread half of the mascarpone cream evenly on top.
- Place the second cake layer on top, brush with remaining coffee soak, and spread remaining mascarpone cream over the top and sides.
- Finishing Touches:
- Dust with cocoa powder and garnish with chocolate shavings.
- Chill in the fridge for at least 1 hour before serving for best flavor.

- No coffee liqueur? Just use extra coffee.
- For a shortcut: Use a store-bought vanilla cake and just do the soak and cream layers.
