Description

A rich, coffee-infused twist on the classic tiramisu, this cake features soft layers soaked in espresso, creamy mascarpone filling, and a dusting of cocoa powder. Perfect for coffee lovers!

For the Cake:

  • 2 cups all-purpose flour
  • 2 1/2 tsp baking powder
  • 1/2 tsp salt
  • 1 cup unsalted butter, softened
  • 1 3/4 cups granulated sugar
  • 4 large eggs
  • 1 tsp vanilla extract
  • 1 cup whole milk

For the Coffee Soak:

  • 1 cup strong brewed coffee or espresso, cooled
  • 2 tbsp coffee liqueur (optional, like Kahlúa)
  • 2 tbsp sugar

For the Mascarpone Cream:

  • 8 oz mascarpone cheese, softened
  • 1 cup heavy whipping cream
  • 1/2 cup powdered sugar
  • 1 tsp vanilla extract

For Topping:

  • 1/4 cup cocoa powder
  • Dark chocolate shavings (optional)

Instructions

  1. Make the Cake:
    • Preheat oven to 350°F (175°C). Grease and line two 9-inch round cake pans with parchment paper.
    • In a bowl, whisk together flour, baking powder, and salt. Set aside.
    • In a large mixing bowl, beat butter and sugar until light and fluffy.
    • Add eggs one at a time, mixing well. Stir in vanilla extract.
    • Alternately add flour mixture and milk, mixing just until combined.
    • Divide batter evenly between the two pans. Bake for 25-30 minutes, or until a toothpick inserted comes out clean.
    • Let cakes cool completely.
  2. Make the Coffee Soak:
    • In a small bowl, mix coffee, coffee liqueur (if using), and sugar until dissolved.
  3. Make the Mascarpone Cream:
    • Beat mascarpone, heavy cream, powdered sugar, and vanilla until smooth and fluffy (do not overmix).
  4. Assemble the Cake:
    • Place one cake layer on a plate. Brush generously with half of the coffee soak.
    • Spread half of the mascarpone cream evenly on top.
    • Place the second cake layer on top, brush with remaining coffee soak, and spread remaining mascarpone cream over the top and sides.
  5. Finishing Touches:
    • Dust with cocoa powder and garnish with chocolate shavings.
    • Chill in the fridge for at least 1 hour before serving for best flavor.

Notes

  • Make ahead: This cake tastes even better the next day!
  • No coffee liqueur? Just use extra coffee.
  • For a shortcut: Use a store-bought vanilla cake and just do the soak and cream layers.
