Description

A warm and satisfying breakfast bake featuring savory sausage, fluffy eggs, melty cheese, and crispy bread.

Ingredients

Units Scale
  • 1 lb breakfast sausage (pork, turkey, or chicken)
  • 8 large eggs
  • 2 cups whole milk (or half-and-half for extra creaminess)
  • 1/2 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1/2 teaspoon garlic powder
  • 1/2 teaspoon onion powder
  • 1/2 teaspoon dried mustard (optional, adds depth)
  • 1 cup shredded cheddar cheese
  • 1/2 cup shredded mozzarella cheese (or Swiss)
  • 4 cups bread cubes (French bread, sourdough, or Texas toast)
  • 2 tablespoons butter, melted
  • 1/4 cup green onions, chopped (for garnish, optional)

Instructions

1. Preheat & Cook the Sausage:

  1. Preheat oven to 375°F (190°C). Grease a 9×13-inch baking dish.
  2. In a skillet over medium heat, cook sausage until browned, breaking it apart as it cooks (about 5-7 minutes). Drain excess grease and set aside.

2. Prepare the Egg Mixture:

  1. In a large bowl, whisk together eggs, milk, salt, black pepper, garlic powder, onion powder, and dried mustard.

3. Assemble the Casserole:

  1. Spread the bread cubes evenly in the baking dish.
  2. Sprinkle cooked sausage over the bread, followed by shredded cheeses.
  3. Pour the egg mixture evenly over everything, pressing down gently to soak the bread.
  4. Drizzle melted butter over the top.

4. Bake & Serve:

  1. Bake uncovered for 35-40 minutes, or until eggs are set and the top is golden brown.
  2. Let cool for 5 minutes before slicing. Garnish with green onions and serve warm.

Make-Ahead Instructions:

  • Assemble the night before, cover, and refrigerate overnight. Bake in the morning!
  • If chilled overnight, add 5-10 extra minutes to the bake time.

Notes

  • Add veggies: Toss in sautéed bell peppers, mushrooms, or spinach.
  • Make it spicy: Add ¼ teaspoon cayenne pepper or use spicy sausage.
  • No bread? Use hash browns or tater tots instead.
