- 1 1/2 teaspoons baking powder

- 2 tablespoons unsalted butter, melted
- 1 teaspoon vanilla extract
- For the Cinnamon Sugar Coating:
- 1/2 cup granulated sugar
- 1 teaspoon cinnamon
- 3 tablespoons melted butter (for coating)

- For Baked Mini Donuts:
- Preheat oven: Set to 350°F (175°C). Grease a mini donut pan.
- Mix dry ingredients: In a large bowl, whisk together flour, sugar, baking powder, salt, and cinnamon.
- Combine wet ingredients: In another bowl, whisk milk, egg, melted butter, and vanilla.
- Make the batter: Add wet ingredients to dry and mix until just combined. Do not overmix!
- Fill the pan: Spoon or pipe the batter into the mini donut molds, filling about ¾ full.
- Bake: Bake for 10-12 minutes, or until donuts are lightly golden and spring back when touched.
- Coat in cinnamon sugar: While warm, brush donuts with melted butter and roll in the cinnamon sugar mixture.
- Enjoy! Serve warm for the best flavor.
- For Fried Mini Donuts:
- Heat oil: In a deep pan, heat 2 inches of oil to 350°F (175°C).
- Make the batter: Follow the same mixing steps as above.
- Fry the donuts: Scoop small spoonfuls of batter and carefully drop into the oil. Fry for about 1-2 minutes per side, until golden brown.
- Drain & coat: Remove donuts with a slotted spoon, drain on paper towels, then toss in cinnamon sugar while still warm.

- Want extra crispiness? Double coat with cinnamon sugar for a thicker layer.
