Instructions
- Preheat oven to 400°F (200°C). Line a baking sheet with parchment paper.
- In a large bowl, toss the sweet potatoes with olive oil, maple syrup, cinnamon, salt, pepper, vanilla extract, and nutmeg until evenly coated.
- Spread the sweet potatoes in a single layer on the baking sheet.
- Roast for 30-35 minutes, flipping halfway through, until golden brown and tender.
- If using, sprinkle with chopped pecans in the last 5 minutes of roasting for extra crunch.
