Description

These caramelized, crispy-edged sweet potatoes are roasted with warm cinnamon and sweet maple syrup for a delicious side dish that pairs perfectly with any meal!

Ingredients

Units Scale

  • 2 lbs sweet potatoes, peeled and cut into 1-inch cubes
  • 2 tbsp olive oil
  • 3 tbsp pure maple syrup
  • 1 tsp ground cinnamon
  • 1/2 tsp salt
  • 1/4 tsp black pepper
  • 1/2 tsp vanilla extract (optional)
  • 1/4 tsp nutmeg (optional)
  • 1/2 cup chopped pecans (optional, for crunch)

Instructions

  • Preheat oven to 400°F (200°C). Line a baking sheet with parchment paper.
  • In a large bowl, toss the sweet potatoes with olive oil, maple syrup, cinnamon, salt, pepper, vanilla extract, and nutmeg until evenly coated.
  • Spread the sweet potatoes in a single layer on the baking sheet.
  • Roast for 30-35 minutes, flipping halfway through, until golden brown and tender.
  • If using, sprinkle with chopped pecans in the last 5 minutes of roasting for extra crunch.
  • Serve warm and enjoy!

Notes

  • For extra crispiness, broil for the last 2-3 minutes.
  • Swap pecans for walnuts or skip them for a nut-free version.
  • Drizzle with extra maple syrup before serving for more sweetness.
  • Store leftovers in the fridge for up to 4 days and reheat in the oven or air fryer.
