Description

These noodles are light, flavorful, and packed with fresh cilantro and zesty lime. They make a great side dish or a quick main course with added protein like shrimp or chicken.


Ingredients

  • 8 oz noodles (spaghetti, rice noodles, or soba)
  • 2 tbsp olive oil (or butter)
  • 3 cloves garlic, minced
  • 1 tsp red pepper flakes (optional, for heat)
  • Zest of 1 lime
  • Juice of 2 limes
  • 1 cup fresh cilantro, chopped
  • 1 tbsp soy sauce (or tamari for gluten-free)
  • 1 tsp honey (or maple syrup for vegan)
  • 1/2 tsp salt (or to taste)
  • 1/2 tsp black pepper
  • 1 tbsp sesame oil (optional, for extra flavor)
  • 1/4 cup green onions, sliced (for garnish)
  • 1 tbsp toasted sesame seeds (optional)

Instructions

  1. Cook the noodles according to package instructions. Drain and set aside.
  2. Heat olive oil in a pan over medium heat. Add minced garlic and red pepper flakes, sauté for about 30 seconds until fragrant.
  3. Add lime zest, lime juice, soy sauce, honey, salt, and pepper to the pan. Stir well.
  4. Toss in the cooked noodles and mix until evenly coated.
  5. Turn off the heat and stir in chopped cilantro and sesame oil.
  6. Garnish with green onions and sesame seeds before serving.
  7. Serve warm or cold and enjoy!

Notes

Add grilled chicken, shrimp, or tofu for extra protein.

Swap lime for lemon if needed.

Use gluten-free noodles for a GF option.
