- 8 oz noodles (spaghetti, rice noodles, or soba)
- 2 tbsp olive oil (or butter)
- 3 cloves garlic, minced
- 1 tsp red pepper flakes (optional, for heat)
- Zest of 1 lime
- Juice of 2 limes
- 1 cup fresh cilantro, chopped
- 1 tbsp soy sauce (or tamari for gluten-free)
- 1 tsp honey (or maple syrup for vegan)
- 1/2 tsp salt (or to taste)
- 1/2 tsp black pepper
- 1 tbsp sesame oil (optional, for extra flavor)
- 1/4 cup green onions, sliced (for garnish)
- 1 tbsp toasted sesame seeds (optional)
Instructions
- Cook the noodles according to package instructions. Drain and set aside.
- Heat olive oil in a pan over medium heat. Add minced garlic and red pepper flakes, sauté for about 30 seconds until fragrant.
- Add lime zest, lime juice, soy sauce, honey, salt, and pepper to the pan. Stir well.
- Toss in the cooked noodles and mix until evenly coated.
- Turn off the heat and stir in chopped cilantro and sesame oil.
- Garnish with green onions and sesame seeds before serving.
- Serve warm or cold and enjoy!
Notes
Add grilled chicken, shrimp, or tofu for extra protein.
Swap lime for lemon if needed.
Use gluten-free noodles for a GF option.
