This Cilantro Lime Grilled Chicken is juicy, flavorful, and perfect for summer grilling. The zesty marinade made with fresh lime juice, garlic, and cilantro infuses the chicken with a bright, tangy flavor. It’s an easy weeknight dinner or great for meal prep.
Ingredients

1 1/2 lbs boneless, skinless chicken thighs (or breasts)

1/3 cup freshly squeezed lime juice (about 2-3 limes)

1/4 cup olive oil

1/4 cup chopped fresh cilantro

3 cloves garlic, minced

1 tsp honey

1/2 tsp ground cumin

1/2 tsp paprika

1/2 tsp chili powder

Salt and black pepper, to taste

Optional: lime wedges and extra chopped cilantro, for serving
Instructions

Make the Marinade:
In a medium bowl, whisk together lime juice, olive oil, cilantro, garlic, honey, cumin, paprika, chili powder, salt, and pepper. -
Marinate the Chicken:
Place the chicken in a large resealable bag or shallow dish. Pour the marinade over the chicken, making sure it’s well coated. Cover and refrigerate for at least 30 minutes, preferably 2–4 hours for best flavor. -
Grill the Chicken:
Preheat your grill to medium-high heat. Remove chicken from marinade and shake off excess. Grill chicken for 5–7 minutes per side, or until internal temperature reaches 165°F.

Serve:
Let chicken rest for 5 minutes. Slice and serve with lime wedges and fresh cilantro if desired.

You can also bake this chicken at 400°F for 20–25 minutes.
