Description

This Christmas Ice Cream Cake is a layered, no-bake holiday dessert featuring creamy ice cream, crunchy cookie crust, and festive toppings. With flavors of chocolate, peppermint, or vanilla, it’s an easy and delicious treat for holiday parties!

For the Crust:

  • 24 chocolate sandwich cookies (like Oreos), crushed
  • 5 tbsp butter, melted

For the Ice Cream Layers:

  • 1 1/2 quarts vanilla ice cream, softened
  • 1 1/2 quarts peppermint or chocolate ice cream, softened
  • 1/2 cup crushed candy canes (for a festive crunch)

For the Topping:

  • 1 cup whipped cream or whipped topping
  • 1/2 cup chocolate sauce or ganache
  • 1/4 cup crushed candy canes or holiday sprinkles
  • 1/4 cup mini chocolate chips (optional)

Instructions

  1. Prepare the crust: In a bowl, mix crushed cookies with melted butter. Press firmly into the bottom of a 9-inch springform pan. Freeze for 10 minutes.
  2. Add the first ice cream layer: Spread vanilla ice cream evenly over the crust. Sprinkle with crushed candy canes. Freeze for 20-30 minutes until firm.
  3. Add the second ice cream layer: Spread peppermint or chocolate ice cream over the first layer. Smooth the top and freeze for 4-6 hours (or overnight) until fully set.
  4. Decorate: Before serving, spread whipped cream over the cake. Drizzle with chocolate sauce and sprinkle with crushed candy canes or sprinkles.
  5. Serve: Let sit at room temperature for 5 minutes, then slice and enjoy!

Notes

  • Use different ice cream flavors like mint chocolate chip or cookies & cream for variety.
  • Swap the cookie crust for a graham cracker or brownie base.
  • Store in the freezer for up to 1 week in an airtight container.
