Description

This Chorizo Queso Fundido is an irresistible, melty cheese dip packed with spicy chorizo and a hint of smoky flavor. Serve it hot with chips or tortillas for the ultimate appetizer!

  • 1/2 lb Mexican chorizo, casing removed
  • 1 small onion, finely diced
  • 1 clove garlic, minced
  • 2 cups shredded Oaxaca cheese (or mozzarella)
  • 1 cup shredded Monterey Jack cheese
  • 1/2 tsp smoked paprika
  • 1/4 tsp cayenne pepper (optional, for extra heat)
  • 1 small jalapeño, finely chopped (optional)
  • 1/4 cup chopped fresh cilantro, for garnish
  • Tortilla chips or warm flour tortillas, for serving

Instructions

  • Cook the chorizo: Heat a skillet over medium heat. Add the chorizo and cook, breaking it up with a spatula, until browned and cooked through (about 5–7 minutes).
  • Sauté the aromatics: Stir in the diced onion, garlic, and jalapeño (if using). Cook for another 2–3 minutes until softened. Remove from heat.
  • Melt the cheese: Preheat your oven broiler to high. In an oven-safe skillet or baking dish, spread half of the shredded cheese. Top with the cooked chorizo mixture, then sprinkle the remaining cheese on top.
  • Broil: Place under the broiler for 2–3 minutes, or until the cheese is fully melted and bubbly. Keep an eye on it to avoid burning!
  • Serve hot: Remove from the oven, sprinkle with fresh cilantro, and serve immediately with tortilla chips or warm tortillas.

Notes

  • Best cheeses for queso fundido: Oaxaca cheese is traditional, but mozzarella, Monterey Jack, or a blend of cheeses work well.
  • Keep it smooth: If the cheese firms up, reheat it gently in the oven or a skillet.
  • Make it extra smoky: Add diced chipotle peppers in adobo sauce.
  • Vegetarian option: Swap chorizo for sautéed mushrooms or poblano peppers.
