Description

The Chopped BLT is a fresh, crunchy, and satisfying salad that turns the beloved bacon, lettuce, and tomato sandwich into a low-carb meal. It’s perfect for lunch, light dinners, or as a potluck side. You get all the classic BLT flavor in every bite — no bread required (unless you want it)!


Ingredients

6 slices bacon, cooked crispy and chopped

2 cups romaine lettuce, chopped

1 cup cherry tomatoes, halved

1/2 cup cucumber, diced (optional for extra crunch)

1/4 cup red onion, finely chopped

1/2 avocado, diced

1/4 cup shredded cheddar or crumbled feta (optional)

2 tablespoons mayo or ranch dressing (or more to taste)

Salt and black pepper, to taste

Croutons or toasted bread cubes (optional)


Instructions

  1. In a large bowl, combine the chopped lettuce, cherry tomatoes, cucumber, red onion, and avocado.

  2. Add the crispy bacon and cheese (if using).

  3. Drizzle with mayo or ranch dressing and gently toss to coat everything evenly.

  4. Season with salt and pepper to taste.

  5. Top with croutons or toasted bread cubes if you want that classic sandwich crunch.

  6. Serve immediately and enjoy!


Notes

  • For a lighter version, use turkey bacon and a Greek yogurt-based dressing.

  • Make it a meal by adding grilled chicken or a hard-boiled egg.

 

  • Best eaten fresh, but you can prep ingredients ahead and mix just before serving.
