Description

These no-bake chocolate peanut butter stacks are the perfect combination of crunchy, creamy, and chocolatey goodness. Made with just a few simple ingredients, they come together in minutes and are great for snacking or as a quick dessert.


Ingredients

  • 1 cup semisweet chocolate chips
  • 1/2 cup creamy peanut butter
  • 1 tablespoon coconut oil (optional, for smoother chocolate)
  • 20 Ritz crackers (or any round buttery crackers)
  • 1/4 teaspoon sea salt (optional, for topping)

Instructions

  • Line a baking sheet with parchment paper.
  • In a microwave-safe bowl, melt the chocolate chips and coconut oil in 30-second intervals, stirring in between, until smooth.
  • Stir in the peanut butter until fully combined.
  • Dip one cracker into the chocolate mixture, coating it completely, then place it on the parchment-lined sheet.
  • Place another cracker on top, creating a sandwich, and spoon more chocolate over it until fully coated.
  • Repeat with the remaining crackers.
  • Sprinkle with sea salt if desired.
  • Chill in the refrigerator for about 20 minutes or until the chocolate is set.
  • Enjoy straight from the fridge or let them soften slightly at room temperature.

Notes

  • You can use dark or milk chocolate instead of semisweet.
  • Add crushed peanuts on top for extra crunch.
  • Store in an airtight container in the fridge for up to a week.
