These Chocolate Cherry Coconut Truffles are sweet, chewy, and dipped in rich chocolate for the ultimate bite-sized treat. Made with dried cherries, shredded coconut, and sweetened condensed milk, they’re perfect for the holidays or anytime you crave a no-bake indulgence.
Ingredients

1 (14 oz) can sweetened condensed milk

3 cups shredded sweetened coconut

3/4 cup finely chopped dried cherries

1 tsp vanilla extract

1/4 tsp almond extract (optional)

2 cups semisweet or dark chocolate chips

1 tbsp coconut oil or vegetable shortening (for melting chocolate)
Instructions

In a large bowl, mix together sweetened condensed milk, shredded coconut, chopped cherries, vanilla, and almond extract (if using) until fully combined.

Cover and chill the mixture in the fridge for 1 hour to firm up.

Line a baking sheet with parchment paper. Scoop out tablespoon-sized portions and roll into balls. Place on the sheet and freeze for 30 minutes.

Melt chocolate chips with coconut oil in a microwave-safe bowl in 30-second intervals, stirring until smooth.

Dip each chilled truffle into the melted chocolate, coating completely. Place back on parchment and let set.

Optional: drizzle with extra melted chocolate or top with a pinch of shredded coconut or chopped cherries.

Chill until firm. Store in an airtight container in the fridge.
Notes

You can use dried cranberries if cherries aren’t available.

These truffles freeze well—just thaw for 5–10 minutes before serving.
