Description

These Chocolate Cherry Coconut Truffles are sweet, chewy, and dipped in rich chocolate for the ultimate bite-sized treat. Made with dried cherries, shredded coconut, and sweetened condensed milk, they’re perfect for the holidays or anytime you crave a no-bake indulgence.


Ingredients

  • 1 (14 oz) can sweetened condensed milk

  • 3 cups shredded sweetened coconut

  • 3/4 cup finely chopped dried cherries

  • 1 tsp vanilla extract

  • 1/4 tsp almond extract (optional)

  • 2 cups semisweet or dark chocolate chips

 

  • 1 tbsp coconut oil or vegetable shortening (for melting chocolate)


Instructions

  1. In a large bowl, mix together sweetened condensed milk, shredded coconut, chopped cherries, vanilla, and almond extract (if using) until fully combined.

  2. Cover and chill the mixture in the fridge for 1 hour to firm up.

  3. Line a baking sheet with parchment paper. Scoop out tablespoon-sized portions and roll into balls. Place on the sheet and freeze for 30 minutes.

  4. Melt chocolate chips with coconut oil in a microwave-safe bowl in 30-second intervals, stirring until smooth.

  5. Dip each chilled truffle into the melted chocolate, coating completely. Place back on parchment and let set.

  6. Optional: drizzle with extra melted chocolate or top with a pinch of shredded coconut or chopped cherries.

  7. Chill until firm. Store in an airtight container in the fridge.


Notes

  • You can use dried cranberries if cherries aren’t available.

  • These truffles freeze well—just thaw for 5–10 minutes before serving.

 

  • For extra flair, dip in white chocolate or decorate with colored sprinkles for holidays.
