- 1 cup granulated sugar
- 1/2 cup packed light brown sugar
- 2 large eggs
- 2 teaspoons vanilla extract
- 2 cups all-purpose flour
- 1/2 cup unsweetened cocoa powder
- 1 teaspoon baking soda
- 1/2 teaspoon salt
- 1/4 cup granulated sugar (for rolling)
- About 36 chocolate kisses (unwrapped)
Instructions
- Preheat the oven to 350°F (175°C). Line baking sheets with parchment paper.
- In a large bowl, cream the butter, granulated sugar, and brown sugar until light and fluffy.
- Add the eggs one at a time, beating well after each addition. Stir in the vanilla extract.
- In a separate bowl, whisk together the flour, cocoa powder, baking soda, and salt.
- Gradually add the dry ingredients to the wet ingredients, mixing until just combined.
- Scoop out tablespoon-sized portions of dough and roll them into balls.
- Roll each dough ball in the extra granulated sugar to coat.
- Place the dough balls on the prepared baking sheets, about 2 inches apart.
- Bake for 8–10 minutes, or until the cookies are set but still soft in the center.
- Immediately press a chocolate kiss into the center of each cookie while they’re still warm.
- Cool on the baking sheet for 5 minutes before transferring to a wire rack to cool completely.
