Description

Chili cheese nachos are the ultimate comfort food! Crispy tortilla chips are smothered in hearty chili, melted cheese, and topped with all your favorite nacho fixings. Perfect for game day, parties, or a quick weeknight snack.

For the Chili:

  • 1 lb ground beef or turkey
  • 1 small onion, diced
  • 1 can (15 oz) kidney beans, drained and rinsed
  • 1 can (14.5 oz) diced tomatoes
  • 1 can (8 oz) tomato sauce
  • 1 packet chili seasoning mix
  • 1/2 tsp garlic powder
  • 1/4 tsp cumin
  • Salt and pepper, to taste

For the Nachos:

 

  • 10 oz tortilla chips (about 6 cups)
  • 2 cups shredded cheddar cheese
  • 1 cup shredded Monterey Jack cheese
  • 1/4 cup sliced jalapeños (optional)
  • Sour cream, for topping (optional)
  • Chopped green onions, for garnish (optional)
  • Fresh cilantro, for garnish (optional)

Instructions

  1. Make the Chili:

    • In a large skillet, cook the ground beef or turkey over medium heat until browned, breaking it up with a spoon as it cooks. Drain excess fat if needed.
    • Add the diced onion to the skillet and cook for 3-4 minutes, until softened.
    • Stir in the kidney beans, diced tomatoes, tomato sauce, chili seasoning mix, garlic powder, cumin, salt, and pepper.
    • Bring the mixture to a simmer, then reduce the heat and cook for 15-20 minutes, stirring occasionally, until the chili thickens.
  2. Assemble the Nachos:

    • Preheat your oven to 375°F (190°C).
    • Arrange the tortilla chips in a single layer on a baking sheet or oven-safe dish.
    • Pour the chili over the chips, spreading it out evenly.
    • Sprinkle the shredded cheddar and Monterey Jack cheese over the top of the chili-covered chips.
  3. Bake:

    • Place the nachos in the oven and bake for 10-12 minutes, or until the cheese is melted and bubbly.
    • Remove from the oven and top with sliced jalapeños, sour cream, green onions, and cilantro, if desired.
  4. Serve:

    • Serve your chili cheese nachos immediately while the cheese is still gooey and delicious!

Notes

  • For a spicier kick, use spicy chili seasoning or add extra jalapeños.
  • Feel free to swap the ground beef for ground chicken, turkey, or even a vegetarian protein like black beans or lentils for a plant-based version.
