- 2 cups cooked chicken, shredded (rotisserie or leftover chicken works great)
- 2 medium zucchini, diced
- 1 small onion, diced
- 1 (10.5 oz) can cream of chicken soup
- 1/2 cup sour cream
- 1/2 tsp garlic powder
- 1/2 tsp salt
- 1/4 tsp black pepper
- 1 1/2 cups shredded cheddar cheese
- 1 (6 oz) box stuffing mix (like Stove Top)
- 1/2 cup unsalted butter, melted
Instructions
Preheat & Prep:
- Preheat oven to 375°F (190°C). Grease a 9×13-inch baking dish.
2️⃣ Sauté the Zucchini & Onion:
- In a skillet over medium heat, sauté zucchini and onion for 3-4 minutes until slightly softened.
3️⃣ Mix the Casserole Base:
- In a large bowl, combine shredded chicken, sautéed zucchini and onion, cream of chicken soup, sour cream, garlic powder, salt, pepper, and 1 cup of shredded cheddar cheese.
- Spread the mixture evenly in the prepared baking dish.
4️⃣ Make the Stuffing Topping:
- In a separate bowl, mix the stuffing with melted butter. Sprinkle evenly over the casserole.
5️⃣ Bake:
- Bake uncovered for 25-30 minutes, or until the stuffing is golden and crispy.
- Sprinkle with the remaining ½ cup of cheese and bake for another 5 minutes until melted.

Notes
- Swap zucchini for yellow squash or mushrooms.
