Description

  • 4 boneless, skinless chicken breasts (or thighs)
  • 1 tbsp olive oil
  • 2 tbsp butter
  • 3 cloves garlic, minced
  • 1/2 cup chicken broth
  • 1 (5.2 oz) package Boursin cheese (Garlic & Fine Herbs flavor)
  • 1/2 cup heavy cream
  • 1/2 tsp salt (or to taste)
  • 1/2 tsp black pepper
  • 1/2 tsp Italian seasoning
  • 1/4 tsp red pepper flakes (optional, for heat)
  • 1/4 cup grated Parmesan cheese (optional, for extra richness)
  • 2 tbsp fresh parsley, chopped (for garnish)

Instructions

  1. Sear the chicken – Heat olive oil in a large skillet over medium-high heat. Season chicken with salt, pepper, and Italian seasoning. Sear for 3-4 minutes per side until golden brown. Remove and set aside.
  2. Make the sauce – In the same skillet, reduce heat to medium and melt butter. Add minced garlic and cook for 30 seconds until fragrant. Pour in chicken broth, scraping up any browned bits.
  3. Melt the Boursin – Add the Boursin cheese and stir until melted. Pour in heavy cream and mix until smooth. If using, stir in Parmesan for extra richness.
  4. Simmer the chicken – Return the chicken to the skillet, coating it in the sauce. Cover and let simmer for 5-7 minutes, or until chicken is fully cooked (165°F internal temperature).
  5. Serve – Garnish with fresh parsley and serve with mashed potatoes, pasta, or roasted vegetables.

  • Use chicken thighs for extra juiciness.
  • Swap heavy cream for half-and-half for a lighter version.
