- 4 boneless, skinless chicken breasts (or thighs)
- 1 tbsp olive oil
- 2 tbsp butter
- 3 cloves garlic, minced
- 1/2 cup chicken broth
- 1 (5.2 oz) package Boursin cheese (Garlic & Fine Herbs flavor)
- 1/2 cup heavy cream
- 1/2 tsp salt (or to taste)
- 1/2 tsp black pepper
- 1/2 tsp Italian seasoning
- 1/4 tsp red pepper flakes (optional, for heat)
- 1/4 cup grated Parmesan cheese (optional, for extra richness)
- 2 tbsp fresh parsley, chopped (for garnish)
Instructions
- Sear the chicken – Heat olive oil in a large skillet over medium-high heat. Season chicken with salt, pepper, and Italian seasoning. Sear for 3-4 minutes per side until golden brown. Remove and set aside.
- Make the sauce – In the same skillet, reduce heat to medium and melt butter. Add minced garlic and cook for 30 seconds until fragrant. Pour in chicken broth, scraping up any browned bits.
- Melt the Boursin – Add the Boursin cheese and stir until melted. Pour in heavy cream and mix until smooth. If using, stir in Parmesan for extra richness.
- Simmer the chicken – Return the chicken to the skillet, coating it in the sauce. Cover and let simmer for 5-7 minutes, or until chicken is fully cooked (165°F internal temperature).
- Serve – Garnish with fresh parsley and serve with mashed potatoes, pasta, or roasted vegetables.
