- 2 cups cooked shredded chicken
- 1 cup shredded cheddar cheese (or Mexican blend cheese)
- 1 teaspoon garlic powder
- 1 teaspoon onion powder
- 1 teaspoon ground cumin
- 1/2 teaspoon smoked paprika
- 1/2 teaspoon chili powder
- Salt and pepper to taste
- 10 small corn tortillas
- 2 tablespoons vegetable oil (for frying or brushing)

Instructions
- Prepare the Filling:
In a mixing bowl, combine the shredded chicken, cheese, garlic powder, onion powder, ground cumin, smoked paprika, chili powder, salt, and pepper. Mix well until fully combined. - Soften the Tortillas:
Heat the corn tortillas in the microwave for 20–30 seconds, or wrap them in a damp paper towel to make them pliable. - Roll the Taquitos:
Place about 2 tablespoons of the chicken mixture onto the lower third of each tortilla. Roll tightly and secure with a toothpick if needed. - Cook the Taquitos:
- Frying: Heat 2 tablespoons of oil in a skillet over medium heat. Fry the taquitos seam-side down until golden brown and crispy, about 2–3 minutes per side.
- Baking: Preheat the oven to 425°F (220°C). Place rolled taquitos seam-side down on a baking sheet lined with parchment paper. Brush them lightly with oil and bake for 15–20 minutes until crispy.
- Serve:
Remove toothpicks if used and serve immediately with your favorite toppings and dips.
Notes
- For a healthier option, bake the taquitos instead of frying.
- You can use rotisserie chicken or leftover chicken for convenience.
- Substitute flour tortillas for corn tortillas if preferred.
