- For the Taquitos:
- 2 cups shredded cooked chicken (rotisserie works great!)
- 1/2 teaspoon salt
- 1/2 teaspoon black pepper
- 1 teaspoon chili powder
- 1/2 teaspoon garlic powder
- 1/2 teaspoon cumin
- 1/2 teaspoon paprika
- 4 oz cream cheese, softened
- 1/2 cup shredded cheddar or Mexican blend cheese
- 1/4 cup sour cream
- 1/4 cup salsa (optional, for extra flavor)
- 12 small corn or flour tortillas
- 2 tablespoons vegetable oil (for brushing or frying)
- For Serving:
- Guacamole
- Salsa
- Sour cream
- Fresh cilantro
- Lime wedges
Instructions
- 1. Prepare the Filling
- In a bowl, mix shredded chicken, salt, pepper, chili powder, garlic powder, cumin, and paprika.
- Stir in cream cheese, shredded cheese, sour cream, and salsa until well combined.
- 2. Assemble the Taquitos
- Warm the tortillas slightly to make them more flexible.
- Spoon about 2 tablespoons of filling onto each tortilla and roll tightly.
- Place seam-side down to keep them from unrolling.
- 3. Cook the Taquitos
- Oven-Baked Method (Healthier)
- Preheat oven to 400°F (200°C).
- Place taquitos on a greased baking sheet and brush lightly with vegetable oil.
- Bake for 15-20 minutes, until golden brown and crispy.
- Pan-Fried Method (Extra Crispy)
- Heat ½ inch of oil in a skillet over medium heat.
- Fry taquitos seam-side down for 2-3 minutes per side until crispy.
- Drain on paper towels.
