Description

This hearty and comforting chicken stew is packed with tender chicken, hearty vegetables, and a flavorful broth. It’s an easy one-pot meal that’s perfect for a cozy dinner. Serve it with crusty bread for a satisfying meal!


Ingredients

  • 1 1/2 lbs (680g) boneless, skinless chicken thighs or breasts, cut into bite-sized pieces
  • 2 tbsp olive oil
  • 1 small onion, diced
  • 2 cloves garlic, minced
  • 3 carrots, sliced
  • 2 celery stalks, chopped
  • 3 medium potatoes, diced
  • 1 cup (240ml) chicken broth
  • 1 cup (240ml) water
  • 1 can (14.5 oz) diced tomatoes, drained
  • 1 tsp dried thyme
  • 1 tsp dried rosemary
  • 1 bay leaf
  • 1/2 tsp salt (or to taste)
  • 1/2 tsp black pepper
  • 1/2 cup (120ml) heavy cream (optional, for a creamy stew)
  • 1 tbsp cornstarch + 2 tbsp water (optional, for thickening)
  • 1/2 cup frozen peas (optional, for extra veggies)
  • Fresh parsley, chopped (for garnish)

Instructions

  • Sauté the Aromatics – Heat olive oil in a large pot over medium heat. Add diced onion and cook until soft, about 3 minutes. Add minced garlic and cook for another 30 seconds.
  • Brown the Chicken – Add the chicken pieces and cook until lightly browned on all sides, about 5 minutes.
  • Add Vegetables and Broth – Stir in carrots, celery, and potatoes. Pour in chicken broth, water, and diced tomatoes. Add thyme, rosemary, bay leaf, salt, and pepper. Stir well.
  • Simmer – Bring the stew to a boil, then reduce heat and let it simmer for about 30 minutes, or until the vegetables are tender.
  • Thicken (Optional) – If you want a thicker stew, mix cornstarch with water and stir it in. Let it simmer for another 5 minutes until the stew thickens.
  • Make it Creamy (Optional) – Stir in heavy cream for a richer texture. Add frozen peas in the last 5 minutes of cooking if using.
  • Serve – Remove the bay leaf, garnish with fresh parsley, and serve hot with bread or rice.

Notes

  • You can substitute chicken with turkey for a variation.
  • For a dairy-free version, omit the heavy cream.
  • Add more vegetables like bell peppers or mushrooms for extra flavor.
