- 1 1/2 lbs (680g) boneless, skinless chicken thighs or breasts, cut into bite-sized pieces
- 2 tbsp olive oil
- 1 small onion, diced
- 2 cloves garlic, minced
- 3 carrots, sliced
- 2 celery stalks, chopped
- 3 medium potatoes, diced
- 1 cup (240ml) chicken broth
- 1 cup (240ml) water
- 1 can (14.5 oz) diced tomatoes, drained
- 1 tsp dried thyme
- 1 tsp dried rosemary
- 1 bay leaf
- 1/2 tsp salt (or to taste)
- 1/2 tsp black pepper
- 1/2 cup (120ml) heavy cream (optional, for a creamy stew)
- 1 tbsp cornstarch + 2 tbsp water (optional, for thickening)
- 1/2 cup frozen peas (optional, for extra veggies)
- Fresh parsley, chopped (for garnish)
Instructions
- Sauté the Aromatics – Heat olive oil in a large pot over medium heat. Add diced onion and cook until soft, about 3 minutes. Add minced garlic and cook for another 30 seconds.
- Brown the Chicken – Add the chicken pieces and cook until lightly browned on all sides, about 5 minutes.
- Add Vegetables and Broth – Stir in carrots, celery, and potatoes. Pour in chicken broth, water, and diced tomatoes. Add thyme, rosemary, bay leaf, salt, and pepper. Stir well.
- Simmer – Bring the stew to a boil, then reduce heat and let it simmer for about 30 minutes, or until the vegetables are tender.
- Thicken (Optional) – If you want a thicker stew, mix cornstarch with water and stir it in. Let it simmer for another 5 minutes until the stew thickens.
- Make it Creamy (Optional) – Stir in heavy cream for a richer texture. Add frozen peas in the last 5 minutes of cooking if using.
- Serve – Remove the bay leaf, garnish with fresh parsley, and serve hot with bread or rice.

- You can substitute chicken with turkey for a variation.
