Description
These Chicken Fajita Burrito Bowls are a flavorful, healthy, and customizable meal packed with seasoned chicken, sautéed peppers and onions, rice, and all your favorite toppings. Great for meal prep or a family-style dinner!
Ingredients
For the Chicken Fajitas:

1 1/2 lbs boneless skinless chicken breasts, sliced into thin strips

1 red bell pepper, sliced

1 yellow bell pepper, sliced

1 green bell pepper, sliced

1 medium red onion, sliced

2 tablespoons olive oil

1 tablespoon lime juice
-
1 teaspoon chili powder
-
1 teaspoon paprika
-
1 teaspoon cumin
-
1/2 teaspoon garlic powder

1/2 teaspoon onion powder

1/2 teaspoon salt
-
1/4 teaspoon black pepper
For the Bowls:

3 cups cooked rice (white, brown, or cauliflower rice)

1 can (15 oz) black beans, drained and rinsed

1 cup corn kernels (fresh, frozen, or canned)

1/2 cup salsa or pico de gallo
-
1/2 cup shredded cheddar or Mexican blend cheese
-
1 avocado, sliced or diced
-
Optional toppings: sour cream, chopped cilantro, jalapeños, lime wedges
Instructions

In a large bowl, combine sliced chicken, olive oil, lime juice, and all the fajita seasonings. Toss to coat.

Heat a large skillet over medium-high heat. Cook the chicken for 6–8 minutes, stirring occasionally, until cooked through and slightly charred. Remove and set aside.

In the same skillet, add a little more oil if needed and cook the peppers and onions for 5–7 minutes, until tender and slightly charred.

Assemble each bowl with a scoop of rice, black beans, corn, cooked chicken, peppers, and onions.

Top with salsa, cheese, avocado, and any other desired toppings. Serve with lime wedges.
Notes

You can swap the chicken for steak, shrimp, or tofu.
