Description

These Chicken Fajita Burrito Bowls are a flavorful, healthy, and customizable meal packed with seasoned chicken, sautéed peppers and onions, rice, and all your favorite toppings. Great for meal prep or a family-style dinner!


Ingredients

For the Chicken Fajitas:

  • 1 1/2 lbs boneless skinless chicken breasts, sliced into thin strips

  • 1 red bell pepper, sliced

  • 1 yellow bell pepper, sliced

  • 1 green bell pepper, sliced

  • 1 medium red onion, sliced

  • 2 tablespoons olive oil

  • 1 tablespoon lime juice

  • 1 teaspoon chili powder

  • 1 teaspoon paprika

  • 1 teaspoon cumin

  • 1/2 teaspoon garlic powder

  • 1/2 teaspoon onion powder

  • 1/2 teaspoon salt

  • 1/4 teaspoon black pepper

For the Bowls:

 

  • 3 cups cooked rice (white, brown, or cauliflower rice)

  • 1 can (15 oz) black beans, drained and rinsed

  • 1 cup corn kernels (fresh, frozen, or canned)

  • 1/2 cup salsa or pico de gallo

  • 1/2 cup shredded cheddar or Mexican blend cheese

  • 1 avocado, sliced or diced

  • Optional toppings: sour cream, chopped cilantro, jalapeños, lime wedges


Instructions

  1. In a large bowl, combine sliced chicken, olive oil, lime juice, and all the fajita seasonings. Toss to coat.

  2. Heat a large skillet over medium-high heat. Cook the chicken for 6–8 minutes, stirring occasionally, until cooked through and slightly charred. Remove and set aside.

  3. In the same skillet, add a little more oil if needed and cook the peppers and onions for 5–7 minutes, until tender and slightly charred.

  4. Assemble each bowl with a scoop of rice, black beans, corn, cooked chicken, peppers, and onions.

  5. Top with salsa, cheese, avocado, and any other desired toppings. Serve with lime wedges.


Notes

  • You can swap the chicken for steak, shrimp, or tofu.

  • Store leftovers in the fridge for up to 4 days – great for meal prep!

 

  • Add hot sauce or chipotle mayo for extra flavor.
