Description

A smoky, spicy, and creamy chicken dish with a rich chipotle sauce. Perfect for tacos, rice bowls, or just by itself!


Ingredients

  • 2 boneless, skinless chicken breasts (or thighs)
  • 1 tablespoon olive oil
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1/2 teaspoon cumin
  • 1/2 teaspoon smoked paprika
  • 2 cloves garlic, minced
  • 1 small onion, finely chopped
  • 12 chipotle peppers in adobo sauce, finely chopped
  • 1 teaspoon adobo sauce (from the chipotle can)
  • 1/2 cup chicken broth
  • 1/2 cup heavy cream (or sour cream for a tangier flavor)
  • 1/2 teaspoon lime juice
  • Fresh cilantro, for garnish

Instructions

  • Season the Chicken: In a bowl, mix salt, pepper, cumin, and smoked paprika. Rub it all over the chicken.
  • Sear the Chicken: Heat olive oil in a pan over medium heat. Add the chicken and cook for 4-5 minutes per side until golden brown. Remove and set aside.
  • Make the Sauce: In the same pan, add onion and garlic. Sauté for 2 minutes until fragrant. Stir in the chipotle peppers and adobo sauce.
  • Simmer: Pour in the chicken broth, stir, and let it simmer for 2 minutes.
  • Add Cream: Lower the heat and stir in the heavy cream. Let it cook for another 2 minutes.
  • Return Chicken: Place the chicken back into the pan and coat it with the sauce. Let it cook for another 5 minutes until fully cooked.
  • Finish & Serve: Stir in lime juice, garnish with fresh cilantro, and serve hot!

Notes

  • Adjust spice levels by adding more or fewer chipotle peppers.
  • For a lighter version, use Greek yogurt instead of heavy cream.
  • Serve with rice, tortillas, or a fresh salad!
