A smoky, spicy, and creamy chicken dish with a rich chipotle sauce. Perfect for tacos, rice bowls, or just by itself!

- 2 boneless, skinless chicken breasts (or thighs)
- 1 tablespoon olive oil
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 1/2 teaspoon cumin
- 1/2 teaspoon smoked paprika
- 2 cloves garlic, minced
- 1 small onion, finely chopped
- 1–2 chipotle peppers in adobo sauce, finely chopped
- 1 teaspoon adobo sauce (from the chipotle can)
- 1/2 cup chicken broth
- 1/2 cup heavy cream (or sour cream for a tangier flavor)
- 1/2 teaspoon lime juice
- Fresh cilantro, for garnish
Instructions
- Season the Chicken: In a bowl, mix salt, pepper, cumin, and smoked paprika. Rub it all over the chicken.
- Sear the Chicken: Heat olive oil in a pan over medium heat. Add the chicken and cook for 4-5 minutes per side until golden brown. Remove and set aside.
- Make the Sauce: In the same pan, add onion and garlic. Sauté for 2 minutes until fragrant. Stir in the chipotle peppers and adobo sauce.
- Simmer: Pour in the chicken broth, stir, and let it simmer for 2 minutes.
- Add Cream: Lower the heat and stir in the heavy cream. Let it cook for another 2 minutes.
- Return Chicken: Place the chicken back into the pan and coat it with the sauce. Let it cook for another 5 minutes until fully cooked.
- Finish & Serve: Stir in lime juice, garnish with fresh cilantro, and serve hot!
Notes
- Adjust spice levels by adding more or fewer chipotle peppers.
- For a lighter version, use Greek yogurt instead of heavy cream.
- Serve with rice, tortillas, or a fresh salad!
