For the Chicken:
- 1 lb boneless, skinless chicken breast (or thighs), thinly sliced
- 1 tablespoon olive oil
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 1 teaspoon garlic powder
- 1 teaspoon onion powder
- 1 teaspoon smoked paprika
- 1 teaspoon Worcestershire sauce
For the Veggies:
- 1 tablespoon butter
- 1 small onion, thinly sliced
- 1 bell pepper (red, green, or yellow), thinly sliced
- 1 cup mushrooms, sliced
- 1/2 teaspoon salt
- 1/2 teaspoon Italian seasoning
For the Cheese:
- 4 slices provolone cheese (or mozzarella)
- 1/2 cup shredded Monterey Jack or cheddar (optional)
For Serving (Optional):
- Hoagie rolls or sub buns
- Cooked rice or cauliflower rice
- Fresh parsley for garnish
Instructions
- Prepare the Chicken:
- Heat olive oil in a large skillet over medium-high heat.
- Add sliced chicken, season with salt, pepper, garlic powder, onion powder, paprika, and Worcestershire sauce.
- Cook for 5-7 minutes, stirring occasionally, until fully cooked and slightly browned. Remove from the skillet and set aside.
- Sauté the Veggies:
- In the same skillet, melt butter. Add onions, bell peppers, and mushrooms.
- Season with salt and Italian seasoning. Sauté for 5-6 minutes until softened.
- Combine & Melt the Cheese:
- Return the cooked chicken to the skillet and mix with the veggies.
- Lower the heat and layer the cheese over the top. Cover with a lid and let the cheese melt for 1-2 minutes.
- Serve & Enjoy:
- Spoon the cheesy chicken mixture into hoagie rolls for sandwiches.
- Serve over rice, cauliflower rice, or eat as-is for a low-carb option.
