Description

These Cherry Pie Bars are everything you love about cherry pie—sweet, buttery crust and juicy cherry filling—but in easy, handheld bar form! Perfect for potlucks, holidays, or a simple dessert at home, these bars come together quickly and taste like a bite of summer in every square.


Ingredients

For the dough:

  • 1 cup unsalted butter, softened

  • 2 cups granulated sugar

  • 1 teaspoon vanilla extract

  • 1/2 teaspoon almond extract (optional, enhances cherry flavor)

  • 4 large eggs

  • 3 cups all-purpose flour

  • 1 teaspoon salt

  • 1 (21 oz) can cherry pie filling

For the glaze:

 

  • 1 cup powdered sugar

  • 1-2 tablespoons milk

  • 1/2 teaspoon vanilla or almond extract


Instructions

  • Preheat oven: Set oven to 350°F (175°C). Grease or line a 9×13-inch baking pan with parchment paper.

  • Make the dough: In a large bowl, cream butter and sugar until light and fluffy. Beat in vanilla, almond extract, and eggs, one at a time. Gradually add flour and salt, mixing until smooth.

  • Assemble the bars: Spread about 2/3 of the dough into the prepared pan. Spoon cherry pie filling evenly over the dough. Drop the remaining dough by spoonfuls over the top.

  • Bake: Bake for 35–40 minutes, or until the top is lightly golden and cooked through. Let cool completely.

  • Make the glaze: In a small bowl, whisk together powdered sugar, milk, and extract until smooth. Drizzle over the cooled bars.

 

  • Slice and serve: Cut into squares and enjoy!


Notes

Try swapping in other pie fillings like blueberry or apple for variety.

 

Store in an airtight container at room temperature for 3 days or refrigerate for up to 5 days.

 

Bars can be frozen (without glaze) and glazed after thawing.
