Ingredients
For the dough:
-
1 cup unsalted butter, softened
-
2 cups granulated sugar
-
1 teaspoon vanilla extract
-
1/2 teaspoon almond extract (optional, enhances cherry flavor)
-
4 large eggs
-
3 cups all-purpose flour
-
1 teaspoon salt
-
1 (21 oz) can cherry pie filling
For the glaze:
-
1 cup powdered sugar
-
1-2 tablespoons milk
-
1/2 teaspoon vanilla or almond extract
Instructions
-
Preheat oven: Set oven to 350°F (175°C). Grease or line a 9×13-inch baking pan with parchment paper.
-
Make the dough: In a large bowl, cream butter and sugar until light and fluffy. Beat in vanilla, almond extract, and eggs, one at a time. Gradually add flour and salt, mixing until smooth.
-
Assemble the bars: Spread about 2/3 of the dough into the prepared pan. Spoon cherry pie filling evenly over the dough. Drop the remaining dough by spoonfuls over the top.
-
Bake: Bake for 35–40 minutes, or until the top is lightly golden and cooked through. Let cool completely.
-
Make the glaze: In a small bowl, whisk together powdered sugar, milk, and extract until smooth. Drizzle over the cooled bars.
-
Slice and serve: Cut into squares and enjoy!
Notes
Try swapping in other pie fillings like blueberry or apple for variety.
Store in an airtight container at room temperature for 3 days or refrigerate for up to 5 days.
