- For the Cherry Filling:
- 1 (10 oz) jar maraschino cherries, drained and finely chopped
- 3 cups powdered sugar
- 1/2 cup unsalted butter, softened
- 1 tsp vanilla extract
- 1/2 tsp almond extract
- 1 tbsp cherry juice (from the jar)
- 1/2 cup sweetened shredded coconut (optional)
- For the Chocolate Coating:
- 2 cups semisweet or milk chocolate chips
- 1 tbsp coconut oil or shortening
- 1/2 cup finely chopped roasted peanuts
Instructions
- Make the Cherry Filling:
- In a mixing bowl, beat butter, cherry juice, vanilla, and almond extract until smooth.
- Gradually add powdered sugar, mixing until a thick dough forms.
- Stir in chopped cherries (and coconut, if using).
- Cover and chill for 30 minutes to firm up.
- Form the Truffles:
- Scoop small portions of the cherry mixture and roll into 1-inch balls.
- Place on a parchment-lined baking sheet and freeze for 30 minutes.
- Melt the Chocolate:
- In a microwave-safe bowl, melt chocolate chips and coconut oil in 30-second intervals, stirring until smooth.
- Coat the Truffles:
- Roll each cherry ball in chopped peanuts, pressing lightly to stick.
- Dip into melted chocolate, ensuring full coverage.
- Place back on the baking sheet and refrigerate for 15 minutes, or until set.
- Serve & Enjoy!
- Store in an airtight container in the fridge for up to 1 week.
Notes
- No coconut? Simply leave it out for a smoother filling.
- Want a softer filling? Add an extra ½ tbsp cherry juice.
- Use dark chocolate for a less sweet version.
- Freeze-friendly! Store in the freezer for up to 2 months.
