For the Cherry Layer:

- 1/4 cup unsalted butter
- 1 (10 oz) jar maraschino cherries, drained and chopped (reserve 2 tablespoons juice)
- 1 (7 oz) jar marshmallow creme (or 1 1/2 cups mini marshmallows)
- 1/2 teaspoon almond extract (optional, for extra flavor)
- 2 cups powdered sugar
For the Chocolate-Peanut Topping:
- 2 cups semi-sweet chocolate chips
- 1 1/2 cups salted peanuts, roughly chopped
- 1/4 cup creamy peanut butter

- Prepare the Pan:
- Line a 9×13-inch baking dish with parchment paper or lightly grease it.
- Make the Cherry Layer:
- In a medium saucepan, combine the granulated sugar, milk, and butter.
- Bring to a gentle boil over medium heat, stirring constantly until the sugar is dissolved (about 3–4 minutes).
- Remove from heat and stir in the chopped maraschino cherries, reserved cherry juice, marshmallow creme (or mini marshmallows), and almond extract if using.
- Mix until smooth, then gradually stir in the powdered sugar until fully combined and thick.
- Spread the cherry mixture evenly into the prepared pan. Let it cool slightly while preparing the topping.
- Prepare the Chocolate-Peanut Topping:
- In a microwave-safe bowl, combine the chocolate chips and peanut butter. Microwave in 30-second intervals, stirring between each, until smooth and melted.
- Stir in the chopped peanuts.
- Assemble the Bars:
- Pour the chocolate-peanut mixture over the cherry layer, spreading it evenly with a spatula.
- Chill and Set:
- Refrigerate the bars for at least 2 hours, or until fully set.
- Slice and Serve:
- Once set, remove the bars from the pan using the parchment paper.
- Cut into squares or rectangles and enjoy!
