Description

These Cherry Marshmallow Fudge Bars are rich, chewy, and loaded with cherry goodness. A chocolatey oat crust is layered with creamy fudge, gooey marshmallows, and sweet cherry pie filling—making this a decadent and fun dessert perfect for parties or the holidays.


Ingredients

For the crust and topping:

  • 1 cup butter, softened

  • 2 cups packed brown sugar

  • 2 large eggs

  • 2 teaspoons vanilla extract

  • 2 1/2 cups all-purpose flour

  • 1 teaspoon baking soda

  • 1/2 teaspoon salt

  • 3 cups quick-cooking oats

For the filling:

 

  • 1 can (14 oz) sweetened condensed milk

  • 2 cups semisweet chocolate chips

  • 2 tablespoons butter

  • 1/2 teaspoon almond extract

  • 2 cups miniature marshmallows

  • 1 can (21 oz) cherry pie filling


Instructions

  1. Preheat oven: Set oven to 350°F (175°C). Grease a 13×9-inch baking pan or line with parchment paper.

  2. Make the crust/topping: In a large bowl, cream together butter and brown sugar until light and fluffy. Beat in eggs and vanilla. In another bowl, whisk together flour, baking soda, and salt. Gradually add to the creamed mixture. Stir in oats.

  3. Layer the base: Press 3/4 of the oat mixture into the bottom of the prepared pan. Reserve the rest for topping.

  4. Prepare fudge filling: In a saucepan over low heat, melt sweetened condensed milk, chocolate chips, and butter. Stir constantly until smooth. Remove from heat and stir in almond extract.

  5. Assemble bars: Sprinkle marshmallows evenly over the crust. Pour fudge mixture over marshmallows and spread gently. Drop spoonfuls of cherry pie filling over the fudge layer. Crumble the reserved oat mixture over the top.

  6. Bake: Bake for 35–40 minutes or until the top is golden brown. Cool completely in the pan before cutting into bars.
