Ingredients

Scale

For the Steak Bites:

  • 1 lb sirloin steak, cut into bite-sized pieces
  • 1 tablespoon olive oil
  • 1 tablespoon butter
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1/2 teaspoon smoked paprika
  • 1/2 teaspoon garlic powder
  • 1/2 teaspoon onion powder
  • 1/4 teaspoon red pepper flakes (optional, for spice)

For the Pasta and Sauce:

  • 10 oz rotini pasta
  • 2 tablespoons butter
  • 3 cloves garlic, minced
  • 1 1/2 cups heavy cream
  • 1/2 cup beef broth
  • 1 teaspoon Worcestershire sauce
  • 1/2 teaspoon Italian seasoning
  • 1/2 teaspoon black pepper
  • 1 1/2 cups shredded cheddar cheese
  • 1/2 cup shredded mozzarella cheese
  • 1/4 cup grated Parmesan cheese
  • 2 tablespoons chopped fresh parsley (for garnish)

Instructions

Cook the pasta

  • Bring a large pot of salted water to a boil and cook rotini according to package instructions until al dente. Drain and set aside.

2. Sear the steak bites

  • Heat 1 tablespoon olive oil and 1 tablespoon butter in a large skillet over medium-high heat.
  • Add steak bites and season with salt, pepper, smoked paprika, garlic powder, onion powder, and red pepper flakes.
  • Sear for 2-3 minutes per side until browned and cooked to your desired doneness. Remove from the skillet and set aside.

3. Make the cheese sauce

  • In the same skillet, melt 2 tablespoons butter over medium heat. Add minced garlic and cook for 30 seconds until fragrant.
  • Pour in heavy cream, beef broth, Worcestershire sauce, Italian seasoning, and black pepper. Stir and let simmer for 3-4 minutes to thicken.
  • Gradually stir in cheddar cheese, mozzarella, and Parmesan, mixing until smooth and creamy.

4. Combine everything

  • Add the cooked rotini and steak bites into the cheese sauce. Stir well to coat everything evenly.
  • Cook for another 2 minutes until heated through.

5. Serve

  • Garnish with chopped fresh parsley and extra Parmesan cheese. Serve hot and enjoy!

Notes

  • Steak options: Sirloin, ribeye, or filet mignon work best for tender steak bites.
  • Extra flavor: Add sautéed mushrooms or caramelized onions for depth.
  • Spicy kick: Increase red pepper flakes or add a dash of hot sauce.
  • Lighter version: Use half-and-half instead of heavy cream.
  • Gluten-free: Use gluten-free pasta.
