Description

A rich and creamy soup loaded with hearty sausage, tender potatoes, and plenty of gooey cheese. This comforting dish is perfect for chilly nights and is easy to make in one pot!


Ingredients

  • 1 lb ground sausage (mild or spicy)
  • 4 cups potatoes, peeled and diced
  • 1 small onion, diced
  • 2 cloves garlic, minced
  • 4 cups chicken broth
  • 1 cup milk
  • 1 cup heavy cream
  • 2 cups shredded cheddar cheese
  • 1/2 teaspoon salt (adjust to taste)
  • 1/2 teaspoon black pepper
  • 1/2 teaspoon smoked paprika (optional)
  • 1/2 teaspoon dried thyme
  • 1 tablespoon butter
  • 2 tablespoons all-purpose flour
  • 1 cup frozen corn (optional)
  • 1/2 cup cooked and crumbled bacon (optional)
  • Chopped green onions or parsley for garnish

Instructions

  • Cook the sausage – In a large pot or Dutch oven, cook the sausage over medium heat until browned. Remove and set aside, leaving about a tablespoon of grease in the pot.
  • Sauté the aromatics – Add the butter, then cook the onion until soft (about 3 minutes). Stir in the garlic and cook for another minute.
  • Make the roux – Sprinkle in the flour and stir constantly for 1-2 minutes until lightly golden.
  • Add broth and potatoes – Slowly pour in the chicken broth, stirring to dissolve any flour bits. Add diced potatoes, salt, pepper, paprika, and thyme. Bring to a simmer and cook for 15 minutes or until potatoes are fork-tender.
  • Blend (optional) – For a smoother soup, use an immersion blender to blend part of the soup. Leave some chunks for texture.
  • Add dairy and cheese – Lower the heat and stir in the milk, heavy cream, and shredded cheddar. Mix until smooth.
  • Return the sausage – Add the cooked sausage and optional corn and bacon. Simmer for another 5 minutes.
  • Serve – Garnish with green onions or parsley and enjoy!

Notes

  • Use spicy sausage for extra heat.
  • Sharp cheddar gives the best cheesy flavor.
  • If the soup is too thick, add more broth or milk.
