- For the Meatloaf Base:
- 1 1/2 lbs (680g) ground beef (or a mix of beef and pork)
- 1/2 cup breadcrumbs (or crushed crackers)
- 1 egg
- 1/2 cup milk
- 1/2 small onion, finely diced
- 2 cloves garlic, minced
- 1 tablespoon Worcestershire sauce
- 1/2 teaspoon salt
- 1/2 teaspoon black pepper
- 1/2 teaspoon smoked paprika
- 1/2 teaspoon dried oregano
- 1/2 cup ketchup
- For the Loaded Mashed Potato Topping:
- 2 lbs (900g) russet or Yukon Gold potatoes, peeled and cubed
- 4 tablespoons butter
- 1/2 cup milk or heavy cream
- 1/2 teaspoon garlic powder
- 1/2 teaspoon salt
- 1/2 teaspoon black pepper
- 1/2 cup sour cream
- 1 cup shredded cheddar cheese (plus extra for topping)
- 1/4 cup chopped cooked bacon
- 2 tablespoons chopped green onions (for garnish)
Instructions
- 1. Prepare the Meatloaf Base
- Preheat oven to 375°F (190°C).
- In a large bowl, combine ground beef, breadcrumbs, egg, milk, onion, garlic, Worcestershire sauce, salt, pepper, paprika, and oregano. Mix until just combined.
- Press the mixture evenly into a greased 9×13-inch baking dish.
- Spread ketchup evenly over the top.
- Bake for 25-30 minutes, until partially cooked.
- 2. Make the Mashed Potatoes
- While the meatloaf bakes, boil potatoes in a large pot of salted water until tender, about 15 minutes.
- Drain and mash with butter, milk, garlic powder, salt, and pepper until smooth.
- Stir in sour cream and 1 cup shredded cheddar cheese.
- 3. Assemble the Casserole
- Remove the meatloaf from the oven and carefully spread the mashed potatoes over the top.
- Sprinkle with extra cheddar cheese and chopped bacon.
- 4. Bake & Serve
- Return to the oven and bake for another 15 minutes, until the cheese is melted and bubbly.
- Garnish with chopped green onions and serve hot!
Notes
- Make it Spicier: Add cayenne pepper or hot sauce to the meatloaf mixture.
- Make it Lighter: Use ground turkey or chicken instead of beef.
