Description

This Cheesy Keto Cabbage Soup is a hearty, creamy, and flavorful dish packed with smoked sausage, tender cabbage, and gooey melted cheese. It’s low-carb, easy to make, and perfect for meal prep. A true comfort food that won’t kick you out of ketosis!


Ingredients

  • 1 lb smoked sausage (kielbasa or andouille), sliced
  • 2 tablespoons butter
  • 1 small onion, diced
  • 3 cloves garlic, minced
  • 1/2 head green cabbage, chopped
  • 4 cups chicken broth (low sodium)
  • 1 teaspoon smoked paprika
  • 1 teaspoon dried thyme
  • 1/2 teaspoon salt (or to taste)
  • 1/2 teaspoon black pepper
  • 1/2 teaspoon red pepper flakes (optional, for spice)
  • 4 oz cream cheese, softened
  • 1 cup heavy cream
  • 1 1/2 cups shredded cheddar cheese
  • 1/2 cup shredded mozzarella cheese
  • 2 tablespoons chopped parsley (for garnish)

Instructions

  • Sauté the Sausage & Veggies:
  • In a large pot or Dutch oven, melt butter over medium heat.
  • Add sliced smoked sausage and cook for 3–4 minutes until browned. Remove and set aside.
  • In the same pot, sauté onion and garlic for 2 minutes, until fragrant.
  • Cook the Cabbage:
  • Add chopped cabbage to the pot and stir well.
  • Pour in the chicken broth, then add smoked paprika, thyme, salt, black pepper, and red pepper flakes.
  • Bring to a simmer and let cook for 15–20 minutes, until cabbage is tender.
  • Make it Creamy & Cheesy:
  • Stir in cream cheese and heavy cream, mixing until smooth.
  • Add back the sausage and simmer for another 5 minutes.
  • Stir in the cheddar and mozzarella cheese, mixing until melted and creamy.
  • Serve & Enjoy:
  • Ladle into bowls and garnish with chopped parsley.

Notes

  • Spicy Version: Use andouille sausage and extra red pepper flakes for heat.
  • Extra Creamy: Add more heavy cream or another ounce of cream cheese.
