Description

This creamy, cheesy, and comforting casserole is the perfect family-friendly meal! Packed with tender chicken, fluffy rice, and nutritious broccoli, all smothered in a rich, cheesy sauce, this dish is easy to make and perfect for busy weeknights.

Ingredients

Units Scale
  • 2 cups cooked chicken, shredded or diced
  • 2 cups cooked white rice (or brown rice)
  • 2 cups broccoli florets, steamed
  • 1 1/2 cups shredded cheddar cheese (plus extra for topping)
  • 1 cup milk
  • 1 can (10.5 oz) cream of chicken soup
  • 1/2 cup sour cream
  • 1 tsp garlic powder
  • 1/2 tsp onion powder
  • 1/2 tsp salt
  • 1/4 tsp black pepper
  • 1/2 tsp paprika (optional, for color)
  • 1/2 cup crushed Ritz crackers or breadcrumbs (for topping)
  • 2 tbsp melted butter (for topping)

Instructions

  • Preheat Oven: Preheat your oven to 375°F (190°C) and grease a 9×13-inch baking dish.
  • Mix Ingredients: In a large bowl, combine the cooked chicken, rice, steamed broccoli, 1 ½ cups shredded cheese, milk, cream of chicken soup, sour cream, and seasonings. Mix well.
  • Assemble Casserole: Spread the mixture evenly into the prepared baking dish.
  • Add Toppings: Sprinkle additional shredded cheese over the top. Mix crushed crackers (or breadcrumbs) with melted butter and sprinkle over the cheese layer.
  • Bake: Bake for 20-25 minutes, or until bubbly and golden brown on top.
  • Serve & Enjoy: Let cool for a few minutes before serving.

Notes

  • Make it healthier: Use Greek yogurt instead of sour cream, and opt for brown rice.
  • Add protein: Try using rotisserie chicken for extra flavor or adding bacon bits.
  • Make it from scratch: Replace the canned soup with a homemade cream sauce using butter, flour, chicken broth, and milk.
