A warm and cheesy Mexican-style wrap filled with seasoned ground beef, melted cheese, and fresh pico de gallo. Perfect for a quick and tasty meal!

For the Beef:
- 1 lb ground beef
- 1 tbsp olive oil
- 1 packet taco seasoning (or homemade: 1 tsp chili powder, 1/2 tsp cumin, 1/2 tsp garlic powder, 1/2 tsp onion powder, 1/4 tsp paprika, 1/4 tsp salt, 1/4 tsp black pepper)
- 1/2 cup water
For the Pico de Gallo:
- 2 Roma tomatoes, diced
- 1/4 cup red onion, finely chopped
- 1 tbsp fresh cilantro, chopped
- 1/2 jalapeño, finely diced (optional)
- 1/2 lime, juiced
- Salt to taste
For the Wraps:
- 4 large flour tortillas
- 1 cup shredded Mexican blend cheese (cheddar, Monterey Jack, or a mix)
- 1/2 cup shredded pepper jack cheese (optional for extra spice)
Instructions
- Cook the Beef – Heat olive oil in a skillet over medium heat. Add the ground beef and cook until browned. Drain excess grease.
- Season the Beef – Stir in taco seasoning and water. Simmer for 5 minutes until thickened.
- Prepare the Pico de Gallo – In a bowl, mix diced tomatoes, red onion, cilantro, jalapeño, lime juice, and salt. Set aside.
- Assemble the Meximelts – Lay out the tortillas. Sprinkle cheese evenly over each tortilla. Add a scoop of seasoned beef and a spoonful of pico de gallo.
- Melt the Cheese – Microwave each Meximelt for 20-30 seconds or wrap them in foil and warm in the oven at 350°F for 5-10 minutes.
- Serve & Enjoy – Fold or roll up the tortillas and serve warm!
Notes
- For extra melty goodness, use a panini press or skillet to lightly toast the Meximelt.
- Add sour cream or guacamole for extra flavor.
- Swap out beef for shredded chicken or ground turkey if desired.
