Description

A warm and cheesy Mexican-style wrap filled with seasoned ground beef, melted cheese, and fresh pico de gallo. Perfect for a quick and tasty meal!


Ingredients

For the Beef:

  • 1 lb ground beef
  • 1 tbsp olive oil
  • 1 packet taco seasoning (or homemade: 1 tsp chili powder, 1/2 tsp cumin, 1/2 tsp garlic powder, 1/2 tsp onion powder, 1/4 tsp paprika, 1/4 tsp salt, 1/4 tsp black pepper)
  • 1/2 cup water

For the Pico de Gallo:

  • 2 Roma tomatoes, diced
  • 1/4 cup red onion, finely chopped
  • 1 tbsp fresh cilantro, chopped
  • 1/2 jalapeño, finely diced (optional)
  • 1/2 lime, juiced
  • Salt to taste

For the Wraps:

 

  • 4 large flour tortillas
  • 1 cup shredded Mexican blend cheese (cheddar, Monterey Jack, or a mix)
  • 1/2 cup shredded pepper jack cheese (optional for extra spice)

Instructions

  • Cook the Beef – Heat olive oil in a skillet over medium heat. Add the ground beef and cook until browned. Drain excess grease.
  • Season the Beef – Stir in taco seasoning and water. Simmer for 5 minutes until thickened.
  • Prepare the Pico de Gallo – In a bowl, mix diced tomatoes, red onion, cilantro, jalapeño, lime juice, and salt. Set aside.
  • Assemble the Meximelts – Lay out the tortillas. Sprinkle cheese evenly over each tortilla. Add a scoop of seasoned beef and a spoonful of pico de gallo.
  • Melt the Cheese – Microwave each Meximelt for 20-30 seconds or wrap them in foil and warm in the oven at 350°F for 5-10 minutes.

 

  • Serve & Enjoy – Fold or roll up the tortillas and serve warm!

Notes

  • For extra melty goodness, use a panini press or skillet to lightly toast the Meximelt.
  • Add sour cream or guacamole for extra flavor.

 

  • Swap out beef for shredded chicken or ground turkey if desired.
