- 2 tbsp butter
- 2 tbsp all-purpose flour
- 1 cup whole milk (or half-and-half for extra creaminess)
- 1 cup shredded cheddar cheese (sharp or mild)
- 1/2 cup shredded mozzarella (or Monterey Jack)
- 1/2 tsp garlic powder
- 1/2 tsp onion powder
- 1/4 tsp smoked paprika (optional)
- 1/4 tsp salt (adjust to taste)
- 1/4 tsp black pepper
- 1 tsp Dijon mustard (optional, adds depth of flavor)
Instructions
ake the Roux:
- In a medium saucepan over medium heat, melt butter.
- Whisk in the flour and cook for 1 minute until slightly golden (this helps remove the raw flour taste).
2️⃣ Add the Milk:
- Slowly pour in the milk, whisking constantly until smooth.
- Let it cook for 2-3 minutes until slightly thickened.
3️⃣ Melt the Cheese:
- Reduce heat to low and add cheddar and mozzarella cheese, stirring until fully melted.
- Stir in garlic powder, onion powder, smoked paprika, salt, black pepper, and Dijon mustard (if using).

Notes
- For a spicier dip, add ¼ tsp cayenne or a splash of hot sauce.
- Use beer instead of milk for a beer cheese dip variation!
- If the dip thickens too much, stir in a splash of warm milk to loosen it.
