Description

Ingredients

  • 2 tbsp butter
  • 2 tbsp all-purpose flour
  • 1 cup whole milk (or half-and-half for extra creaminess)
  • 1 cup shredded cheddar cheese (sharp or mild)
  • 1/2 cup shredded mozzarella (or Monterey Jack)
  • 1/2 tsp garlic powder
  • 1/2 tsp onion powder
  • 1/4 tsp smoked paprika (optional)
  • 1/4 tsp salt (adjust to taste)
  • 1/4 tsp black pepper
  • 1 tsp Dijon mustard (optional, adds depth of flavor)

Instructions

ake the Roux:

  • In a medium saucepan over medium heat, melt butter.
  • Whisk in the flour and cook for 1 minute until slightly golden (this helps remove the raw flour taste).

2️⃣ Add the Milk:

  • Slowly pour in the milk, whisking constantly until smooth.
  • Let it cook for 2-3 minutes until slightly thickened.

3️⃣ Melt the Cheese:

  • Reduce heat to low and add cheddar and mozzarella cheese, stirring until fully melted.
  • Stir in garlic powder, onion powder, smoked paprika, salt, black pepper, and Dijon mustard (if using).

4️⃣ Serve & Enjoy!

  • Remove from heat and serve warm with soft pretzels.

Notes

  • For a spicier dip, add ¼ tsp cayenne or a splash of hot sauce.
  • Use beer instead of milk for a beer cheese dip variation!
  • If the dip thickens too much, stir in a splash of warm milk to loosen it.
