Description
These rich and fudgy brownies are topped with a layer of crushed chocolate cookies and cute orange “carrots” made from chocolate-dipped strawberries. A fun and delicious dessert for Easter or any spring gathering!

For the Brownies:
- 1/2 cup unsalted butter, melted
- 1 cup granulated sugar
- 2 large eggs
- 1 teaspoon vanilla extract
- 1/3 cup unsweetened cocoa powder
- 1/2 cup all-purpose flour
- 1/4 teaspoon salt
- 1/4 teaspoon baking powder
For the Topping:
- 10–12 fresh strawberries, stems attached
- 1 cup orange candy melts (or white chocolate + orange food coloring)
- 1 teaspoon coconut oil (optional, for smoother melting)
- 10 chocolate sandwich cookies (Oreos or similar), crushed
Instructions
ake the Brownies:
- Preheat oven to 350°F (175°C). Grease or line an 8×8-inch baking pan with parchment paper.
- In a bowl, whisk together melted butter and sugar until smooth.
- Add eggs and vanilla extract, mixing well.
- Stir in cocoa powder, flour, salt, and baking powder until just combined.
- Pour batter into the prepared pan and spread evenly.
- Bake for 20–25 minutes, or until a toothpick inserted in the center comes out with a few moist crumbs.
- Let the brownies cool completely before adding the topping.
Make the Carrot Patch Topping:
- Melt the orange candy melts in the microwave in 30-second intervals, stirring in between. If using white chocolate, add orange food coloring. Stir in coconut oil for a smoother texture.
- Dip each strawberry into the melted chocolate, coating completely. Let excess drip off.
- Place the coated strawberries on a parchment-lined tray and let them set. Drizzle extra melted chocolate over the top to create “carrot” lines. Let harden completely.
- Spread the crushed chocolate cookies evenly over the cooled brownies to create the “dirt” layer.
- Gently press the chocolate-dipped strawberries into the brownies to resemble carrots growing in the patch.
