Description

This Caramel Puff Corn is a sweet, buttery, and crunchy treat that’s perfect for holidays, movie nights, or gifting! Made with corn puffs (no hulls or kernels), a rich caramel coating, and baked to perfection, it’s an irresistible snack that’s easy to make.


Ingredients

1 (8-10 oz) bag butter-flavored puff corn (like Chester’s Puffcorn)

1 cup (2 sticks) unsalted butter

1 cup brown sugar (light or dark)

1/2 cup light corn syrup

1 teaspoon vanilla extract

1/2 teaspoon baking soda


Instructions

  • Preheat oven: Set to 250°F (120°C) and line a large baking sheet with parchment paper or grease it well.
  • Prepare the puff corn: Pour the puff corn into a large roasting pan or bowl.
  • Make the caramel: In a saucepan over medium heat, melt butter, then add brown sugar and corn syrup. Stir constantly until the mixture comes to a boil. Let it boil for 2 minutes without stirring.
  • Add vanilla & baking soda: Remove from heat and stir in vanilla extract and baking soda. The caramel will foam up—this helps coat the puff corn evenly.
  • Coat the puff corn: Pour the caramel over the puff corn and stir gently to coat.
  • Bake: Spread the caramel-coated puff corn on the prepared baking sheet and bake for 45 minutes, stirring every 15 minutes to ensure even coating.

 

  • Cool & enjoy: Remove from the oven and let cool completely before breaking into pieces.

Notes

For extra crunch, drizzle with melted chocolate after baking.
