1 (8-10 oz) bag butter-flavored puff corn (like Chester’s Puffcorn)
1 cup (2 sticks) unsalted butter
1 cup brown sugar (light or dark)
1/2 cup light corn syrup
1 teaspoon vanilla extract
1/2 teaspoon baking soda
Instructions
- Preheat oven: Set to 250°F (120°C) and line a large baking sheet with parchment paper or grease it well.
- Prepare the puff corn: Pour the puff corn into a large roasting pan or bowl.
- Make the caramel: In a saucepan over medium heat, melt butter, then add brown sugar and corn syrup. Stir constantly until the mixture comes to a boil. Let it boil for 2 minutes without stirring.
- Add vanilla & baking soda: Remove from heat and stir in vanilla extract and baking soda. The caramel will foam up—this helps coat the puff corn evenly.
- Coat the puff corn: Pour the caramel over the puff corn and stir gently to coat.
- Bake: Spread the caramel-coated puff corn on the prepared baking sheet and bake for 45 minutes, stirring every 15 minutes to ensure even coating.
- Cool & enjoy: Remove from the oven and let cool completely before breaking into pieces.
