- 1 cup light brown sugar
- 1/2 cup unsalted butter
- 1/2 cup light corn syrup (or honey)
- 1/2 teaspoon salt
- 1/2 teaspoon vanilla extract
- 1/4 teaspoon baking soda
Instructions
- Prepare the Popcorn: Pop the popcorn and place it in a large bowl. Remove any unpopped kernels.
- Make the Caramel: In a saucepan over medium heat, melt butter, then stir in brown sugar, corn syrup, and salt. Bring to a boil and cook for 4-5 minutes, stirring occasionally.
- Add Vanilla & Baking Soda: Remove from heat, stir in vanilla extract and baking soda. The mixture will bubble up slightly.
- Coat the Popcorn: Pour the caramel over the popcorn and quickly stir to coat evenly.
- Form the Balls: Grease your hands with butter or cooking spray, then shape the caramel-coated popcorn into balls (about 2-3 inches wide).
- Let Them Set: Place on a parchment-lined tray and let them cool for about 15 minutes before serving.
