Description

This Caprese Pasta Salad is a fresh, easy-to-make side dish that combines all the classic Caprese flavors—juicy tomatoes, creamy mozzarella, and fresh basil—with tender pasta and a tangy balsamic dressing. It’s perfect for picnics, potlucks, or a light lunch.


Ingredients

  • 12 oz (340g) pasta (rotini or penne work great)

  • 2 cups cherry tomatoes, halved

  • 8 oz mozzarella balls (bocconcini), halved

  • 1/2 cup fresh basil leaves, torn

  • 3 tbsp olive oil

  • 1 tbsp balsamic vinegar

  • 1 clove garlic, minced

  • Salt and pepper, to taste


Instructions

  • Cook the pasta according to the package directions. Drain and rinse under cold water to cool.

  • In a small bowl, whisk together olive oil, balsamic vinegar, minced garlic, salt, and pepper.

  • In a large bowl, combine the cooled pasta, cherry tomatoes, mozzarella balls, and fresh basil.

  • Pour the dressing over the salad and toss to coat evenly.

 

  • Chill in the refrigerator for 30 minutes before serving for best flavor.


Notes

  • Add grilled chicken to make it a full meal.

  • For extra flavor, drizzle with balsamic glaze before serving.

  • This salad tastes best when served fresh but can be stored in the fridge for up to 2 days.
