Grilled Campfire Nachos are a fun, easy, and cheesy snack for your next outdoor adventure.   • 2 cups shredded cheddar cheese (or a blend of cheddar and Monterey Jack)
  • 1 can black beans, drained and rinsed (optional)
  • 1 cup cooked chicken or beef (optional)
  • 1 cup sliced jalapeños (fresh or pickled)
  • 1/2 cup sour cream
  • 1/4 cup fresh salsa or pico de gallo
  • 1 tablespoon olive oil or butter (for greasing the grill)
  • 1/4 cup chopped green onions
  • 1/4 cup chopped cilantro (optional)
  • 1 tablespoon lime juice (optional)
  • Salt and pepper to taste

  • Preheat your grill or campfire. If you’re using a grill, set it to medium heat.
  • Lay a large piece of heavy-duty foil (enough to create a “pan” for your nachos) on the grill.
  • Layer tortilla chips evenly over the foil.
  • Sprinkle a generous amount of shredded cheddar cheese over the chips.
  • Add your chosen toppings like beans, chicken, jalapeños, or beef.
  • Top with more cheese to ensure it’s melted throughout.
  • Cover the nachos with another piece of foil to create a “tent” and cook on the grill or campfire for 10-15 minutes, or until the cheese is melted and bubbly.
  • Carefully remove from the grill, and top with fresh salsa, sour cream, green onions, cilantro, and a squeeze of lime juice.
  • Serve immediately and enjoy!
