Description

This easy California Sushi Bowl has all the flavors of your favorite sushi roll—without the hassle of rolling! It features sushi rice, imitation crab, creamy avocado, crisp cucumber, and a drizzle of spicy mayo. Perfect for a quick lunch, light dinner, or meal prep!


Ingredients

For the Bowl:

  • 2 cups cooked sushi rice (or short-grain rice)
  • 1 tablespoon rice vinegar
  • 1 teaspoon sugar
  • 1/2 teaspoon salt
  • 1 cup imitation crab (or real crab, shredded)
  • 1 small avocado, sliced
  • 1/2 cup cucumber, diced
  • 1/4 cup shredded carrots
  • 2 tablespoons sliced green onions
  • 1 tablespoon sesame seeds (white or black)
  • 1 sheet nori (seaweed), cut into small strips

For the Spicy Mayo:

  • 1/4 cup mayonnaise (or Japanese Kewpie mayo)
  • 1 tablespoon sriracha
  • 1 teaspoon soy sauce
  • 1 teaspoon lemon juice

For Garnish (Optional):

  • Extra soy sauce, for drizzling
  • Pickled ginger
  • Wasabi

Instructions

  • Prepare the Rice: In a small bowl, mix the rice vinegar, sugar, and salt. Pour over the warm sushi rice and mix well. Let it cool slightly.
  • Assemble the Bowl: Divide the rice into serving bowls. Arrange the imitation crab, avocado slices, cucumber, shredded carrots, and green onions on top. Sprinkle with sesame seeds and nori strips.
  • Make the Spicy Mayo: In a small bowl, mix the mayonnaise, sriracha, soy sauce, and lemon juice until smooth.
  • Drizzle & Serve: Drizzle the spicy mayo over the sushi bowl and serve with soy sauce, pickled ginger, and wasabi if desired. Enjoy!

Notes

  • Swap imitation crab with real crab, shrimp, or even salmon for variety.
  • Make it low-carb by using cauliflower rice instead of sushi rice.
  • Add edamame or mango for extra freshness and texture.
