- 1 small onion, diced
- 3 cloves garlic, minced
- 4 cups green cabbage, chopped
- 1 large carrot, diced
- 2 celery stalks, diced
- 1 (14.5 oz) can diced tomatoes
- 1 (15 oz) can tomato sauce
- 4 cups beef broth (or vegetable broth)
- 1 cup water
- 1/2 cup uncooked white or brown rice
- 1 tbsp Worcestershire sauce
- 1 tsp salt (adjust to taste)
- 1/2 tsp black pepper
- 1 tsp paprika
- 1/2 tsp dried oregano
- 1/2 tsp dried thyme
- 1/4 tsp red pepper flakes (optional, for a little heat)
- 1 tbsp brown sugar (balances acidity, optional)
- 1 tbsp fresh parsley, chopped (for garnish)
Instructions
Brown the Beef:
- Heat a large pot over medium-high heat.
- Add the ground beef and cook, breaking it apart, until browned (5-7 minutes).
- Drain excess fat if needed.
2. Sauté the Aromatics:
- Add onion, garlic, carrot, and celery to the pot.
- Sauté for 3-4 minutes, until softened and fragrant.
3. Add Cabbage & Seasonings:
- Stir in cabbage, cooking for 2 minutes to slightly soften.
- Add salt, pepper, paprika, oregano, thyme, and red pepper flakes.
4. Simmer the Soup:
- Pour in diced tomatoes, tomato sauce, beef broth, water, Worcestershire sauce, and brown sugar.
- Stir in uncooked rice.
- Bring to a boil, then reduce heat and let simmer for 25-30 minutes, stirring occasionally, until rice and cabbage are tender.
5. Serve & Enjoy:
- Taste and adjust seasonings if needed.
- Garnish with fresh parsley and serve hot with crusty bread or garlic toast.
Notes
Want it thicker? Add an extra ½ cup rice or let simmer longer.
Make it low-carb: Replace rice with cauliflower rice (add in the last 5 minutes of cooking).
Prefer a smoky flavor? Use smoked paprika instead of regular.
