These Butterscotch Graham Cracker Cheesecake Bars have a buttery graham cracker crust, a smooth butterscotch-infused cheesecake filling, and a rich butterscotch drizzle on top. They’re easy to make and perfect for holidays, parties, or an indulgent treat!
Ingredients
For the Graham Cracker Crust:

1 1/2 cups graham cracker crumbs (about 10-12 crackers)

1/4 cup brown sugar

6 tbsp unsalted butter (melted)
For the Butterscotch Cheesecake Filling:

8 oz cream cheese (softened)

1/2 cup sour cream

1/2 cup butterscotch chips (melted)

1/3 cup brown sugar

1/4 cup granulated sugar

2 large eggs
-
1 tsp vanilla extract

1/4 tsp salt
For the Butterscotch Drizzle (Optional):

1/4 cup butterscotch chips

1 tbsp heavy cream
Instructions
Prepare the Crust:

Preheat oven to 325°F (163°C). Line an 8×8-inch baking pan with parchment paper.

In a bowl, mix graham cracker crumbs, brown sugar, and melted butter until combined.

Press the mixture evenly into the bottom of the pan.

Bake for 8 minutes, then let cool slightly.
2. Make the Cheesecake Filling:

In a large bowl, beat the cream cheese, sour cream, melted butterscotch chips, brown sugar, and granulated sugar until smooth.

Add eggs, vanilla extract, and salt, and mix until just combined (do not overmix).
3. Bake the Bars:

Pour the cheesecake filling over the cooled crust and spread evenly.

Bake for 25-30 minutes, or until the center is set but slightly jiggly.

Let cool at room temperature, then refrigerate for at least 3 hours (or overnight).
4. Add the Butterscotch Drizzle (Optional):

Melt butterscotch chips with heavy cream in the microwave in 15-second intervals, stirring until smooth.

Drizzle over chilled bars before slicing.
5. Slice & Serve:

Lift the bars from the pan using parchment paper and cut into squares.
